The Bridge: Interdisciplinary Perspectives on Legal & Social Policy
In spite of significant advances in the prevention, diagnoses, and treatment of most chronic diseases, there is evidence that racial and ethnic people of color tend to receive lower quality of care and less preventive interventions than the majority members of a community. While our health system should improve its efforts at addressing and reducing disproportionality in health care, African Americans can make behavioral changes through diet and exercise that will reduce their susceptibility to chronic illnesses. This article first reviews the prevalence, disparities, and characteristics of chronic diseases impacting the African American population. Second, it discusses culturally connected practices …

Obesity is an epidemic in the United States. Over 61% of U.S. adults and 58% of Nevada adults have Body Mass Index’s (BMI) that classify them as either overweight or obese (Behavioral Risk Factor Surveillance System [BRFSS], 2005). According to a recent article published in the Journal of the American Medical Association, obesity was the second leading cause of preventable death in the United States behind tobacco use (Mokdad, Marks, Stroup & Gerberding, 2004).

Purpose: The worksite health promotion literature has shown that successful nutrition communication programs call for making small changes to diet, one at a time. The use of observational learning (role models) and a “challenge” scenario for behavior change is supported by Social Cognitive Theory. The significance of these small changes in worksites is underscored by a recent Harvard Business Review article suggesting workplace wellness programs can return up $2.71 on every $1.00 invested. Community based participatory research is a research strategy aimed at bridging the gap between research and practice. At the Good Samaritan Senior Center in San Antonio, TX there had seemed to be a disconnect between nutritional education provided to the seniors at their Senior Center and what the seniors did in practice. Despite significant efforts of the staff to provide nutrition education through classes and activities, 61% of the seniors attending still report an unhealthy body weight and many struggle with diabetes according to organizational assessments. Interest in organic milk is increasing. By USDA Certified Organic standards, animals must be fed on pasture for a minimum of 120 days. Research indicates that various factors such as diet impact the nutritional quality and composition of milk. The objective of this study was to understand how feeding practices affected bovine plasma carotenoid concentrations over time. Plasma samples were collected from 9 cows fed on pasture at an organic dairy and from 9 cows fed total mixed ration (TMR) at a conventional dairy. The common onion (Allium cepa) is the most popular and widely grown Allium in Nebraska home gardens. Many members of the onion family (Alliaceae) are used in flower gardens because of their interesting flowers and foliage, but here we're going to focus on the onion as a vegetable crop. This publication will discuss the different types of onions and how to grow onions from onion sets, plants, transplants, and seed. It will cover the different cultivars found here in Nebraska, the nutrition, fertilizing, harvesting, curing and storing of onions.

The effects of the polyunsaturated omega-3 (n-3) and omega-6 (n-6) fatty acids (FA) on hematopoiesis are complex in that both FA forms are processed into leukotrienes, eicosanoids, and prostaglandins, which can have independent effects. These FA have antagonistic effects in that n-6 FA prostaglandins tend to be pro-proliferative and pro-inflammatory, while the effects of n-3 FA prostaglandins are the opposite. We have previously shown that diets high in n-3 FA reduce the size of the middle to later stage myeloid progenitor compartment in FVB X sv129 F1hybrid mice. It has been estimated that about 728 million acres or about 76 percent of the entire land area in the West is used for grazing (Stoddard and Smith 1956). In Utah about 93 percent of the land area or 48,900,000 acres is considered range land (Reuss and Blanch 1951). Although some of this range land is forested, a large area of it can be used only for grazing. Therefore, range livestock production is an important segment of western agriculture.

A working definition of a concept known as ‘food literacy’ encompasses using basic food preparation knowledge that has been learned, understood, and practiced to make better food decisions. To advance these skills for client service, a post-secondary nutrition program would need to include objectives that allow application of knowledge. For this reason, the purpose of this study was to determine the difference in knowledge and application among students in 100, 200 and 400 level college nutrition course(s). Background: Self-identity predicts healthy eating behaviors and intentions above and beyond Theory of Planned Behavior components (TPB; i.e., attitudes, perceived behavioral control, and subjective norms), but interventions exploring the relationship between self-identity and motivation are limited. Self-as-doer identity may be an important point of intervention for healthy eating behaviors (Houser-Marko & Sheldon, 2006). Therefore, I investigated whether the experimental manipulation of a self-as-doer identity predicted improved healthy food consumption, intentions, and increased self-identity as a healthy eater compared to women who received nutritional education or no intervention directly following the intervention and one month post-intervention.

Three studies were conducted to evaluate how the broiler has changed over the years due to intense genetic selection. Four different broiler genotypes, one unselected since the 1950's (HER) representing the old meat-type bird and three current strains (Ross 308, Ross 708, and a test product (TY)) were studied. Differences in growth, morphometry, and response in performance and processing yield to different nutrient levels were studied.
Experiment 1 evaluated growth and morphometric analysis. Birds of each strain were killed weekly from day 7 to day 56, necropsied and cut up parts and organs weighed. Measurement of small intestine segments …

Objective: Lifestyle interventions that target diet and physical activity have been shown to reduce the development of Type 2 diabetes (T2DM) in individuals at risk; however, accessible and effective community-based prevention programs remain lacking. The purpose of this study was to assess the impact of PREPARE, a group lifestyle behaviour change program in adults with prediabetes.
Methods: Adults diagnosed with prediabetes could self-select PREPARE (n=48, intervention arm), consisting of six monthly group nutrition and physical activity education sessions, or, a one-time group education session (n=15, controls), both aimed to prevent Type 2 Diabetes Mellitus (T2DM). A dietary assessment website for use in the primary healthcare setting has been developed. The website allows patients, referred from their GP, to self-report their dietary intake. Data from the website feeds to a dietitian who develops individualised dietary advice for the patient. The aim of this paper is to describe the usability testing of the dietary assessment website with its potential users. Testing was broken into two phases. Forty-two free-living adults with metabolic syndrome volunteered, 17 completed phase one and 10 completed phase two, with a 64% rate of completion. As part of a larger study developing dietary software, this study aims to evaluate a sample of potential users for their experience and comfort with computers and assess the preferred program design and navigation features for the development of the automated diet history interview. A telephone-based questionnaire and focus groups were employed to evaluate the perceptions, beliefs and attitudes of 37 older adults with type 2 diabetes mellitus.
