Revisiting The Master Food Volunteer Program: Examining How To Enhance Nutrition Education In The United States, Stacey Viera, Lindsey Haynes-Maslow
The Journal of Extension
America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Upon close examination by nutritional professionals, concern has arisen regarding the typical contents of a young adult diet. Background: The Washington State COVID-19 lockdown and subsequent school closures brought increased dependency on parents to provide nutritious meals and opportunities for physical activity for their children.
Purpose: The aim of this study was to describe the impacts of the Washington State COVID-19 lockdown on the dietary, physical activity, and screen time habits of children ages 5-10-years-old residing in Kittitas County.
Methods: A researcher-developed Qualtrics survey was created and validated via the Index of Item Objective Congruence. The survey was administered to parents via Facebook, using local Kittitas County Facebook groups.

College student weight gain has steadily increased throughout the past decades. Issues resulting from overweight and obesity can lead to chronic disease and increased mortality risk. Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. University dining halls are understudied food environments that affect student diet quality. This study (1) assessed dining hall offerings at the University of Rhode Island (URI) using the Partnership for a Healthier America’s Healthier Campus Initiative (PAHA) criteria for healthier campus food environments and (2) evaluated student perceptions of the dining hall through a campus-wide survey (n=165). We evaluated breakfast, lunch, and dinner using spring cycle menus (16 weeks in 2019 and 4 in 2021) from two full-service dining halls totaling 29 meals in 2019, and 84 meals in 2021 to determine adherence with PAHA criteria for availability of: 1) …

As higher education becomes more attainable to all populations, college students from low-income backgrounds are at an increased risk of food insecurity due to the financial burdens that come with the transition to college. Food insecurity on U.S. college campuses ranges up to 59%, quadrupling the average national household food insecurity rate of 14%. In college students, food insecurity is correlated with unhealthy eating, alcohol use, and mental health issues.

Introduction: Nationally, rural residents have high consumption of added sugars, yet the top sources have not been explored. Characterizing added-sugar intake in high sugar-sweetened beverage (SSB) consumers in rural areas is an important step to help inform interventions and policies.
Purpose: The objective of this study was to explore the top food and beverage sources of added sugar and to examine variations by sociodemographic characteristics.

Belmont Elementary School serves many children from low-income households (classified as a Title I school with 82.6% of students receiving free or reduced-price lunch) and, thus, was a perfect setting for the birth of an original nutrition curriculum.

Background: The Neighborhood Produce Market (NPM) is a food distribution model similar to a mobile food pantry. NPM stakeholders observed a lack of community engagement and familiarity with produce offered.
Project Description: The objective was to develop a nutrition education curriculum for NPM volunteers to better engage families and community members by providing food samples, recipes, and nutrition education. A stakeholder steering committee guided the needs assessment, curriculum development, volunteer training, and pilot test. Nearly 12.3% of American households are food insecure. In Cache County, Utah, specifically, the rates of food insecurity are even higher (15%). Addressing the issue of food insecurity improves physical/mental health outcomes, childhood cognitive/physical development, family environments, and decreases healthcare costs. Evidence-based strategies to improve food security include increasing one’s access to fresh fruits and vegetables and improving self-efficacy. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. Purpose:The purpose of this pilot intervention study was to provide farmers market (FM) education coupled with FM voucher to assess FM awareness, attendance, and voucher use. Methods:Kindergarten through 3rdgrade students attending a summer school program participated in this three-week FM pilot intervention study. A pre/post intervention questionnaire was distributed to students to assess FM awareness and attendance. In addition, an $8 FM voucher was provided to children for purchases of fruit and vegetables at the local FM. Background: Malnutrition is present in 25-50% of hospitalized patients. Patients identified as malnourished are assigned a code based on the type and severity of malnutrition in order to gain the necessary reimbursement to care for the patients. Background: With increased obesity has come increased ready-made and fast food consumption and decreased homemade food consumption. Previous studies have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.
