On-Farm Hog Processing Demonstration For Teenage Exhibitors: Blending Academic, Laboratory, And Farm-Based Learning, Katherine A. Wells, Chris L. Bruynis, Lyda G. Garcia

COVID-19 challenges induced a U.S. meatpacking industry bottleneck. [University] Extension identified the need and responded by creating a three-step hands-on training for teenage junior fair exhibitors. [University] Extension Meat Scientist and graduate students assisted in demonstrating an on-farm hog harvest and processing event in collaboration with a local Extension office for 4-H and FFA teenagers. To add a practical perspective, a local hog-producing and harvesting family was asked to assist with the event. An online post-survey reflected 90-100% gains in five educational areas and 100% said they would a similar event in the future and recommend it to a friend.

Comparison Of Carcass Characteristics, Meat Quality, And Fatty Acid Composition In Slowand Fast-Growing Broilers At Different Slaughter Weights, Büşra Yaranoğlu, Hi̇lal Çapar Akyüz, Esi̇n Ebru Onbaşilar

This study aimed to compare the slaughter, meat quality characteristics, and fatty acid composition of fast-growing (FAG) and slow-growing (SWG) broilers at different slaughter weights. In the experiments, a total of 90 carcasses were used: 45 SWG (Hubbard-Isa Red JA) and 45 FAG broilers (Ross 308) with 15 carcasses from each slaughter weight group (1500 ± 50 g, 2000 ± 50 g, 2500 ± 50 g). Hot carcass yield and cold carcass yield detected in the FAG broilers were higher than in SGW broilers (p < 0.001). As the weight of slaughter increased, hot carcass and cold carcass yield increased (p < 0.001). The breast percentage was significantly lower in the SWG broilers compared to the FAG broilers (p < 0.001). In contrast, thigh, wing, and abdominal fat percentages were higher in the SWG broilers (p < 0.001). The breast percentage increased as the slaughter weight increased (p < 0.001). SWG broilers had significantly lower pH, except for the pH 24 of the thigh meat (p < 0.01). The L*, a*, and b* values of the SWG broilers were lower than the FAG broilers (p < 0.01). In terms of a* values determined initially and at the 24th h in the breast and thigh meat, the 1500 g slaughter weight group had by far the highest value (p < 0.01). SWG broilers had significantly lower values in terms of cooking loss, water-holding capacity, and drip loss (p < 0.001). C18:2ω6 was detected at higher amounts in the FAG broilers (p < 0.05). The FAG broilers had higher PUFA, desired fatty acids, PUFA/SFA, and thrombogenic index values (p < 0.05). The results show that FAG broilers can meet the strong worldwide demand for meat quantity and quality. Slaughter weight changes only affected the quantity of the meat.

Many options are available for programming stocker cattle growth patterns through forage selection. In semi-arid south Texas rapid growth rates can be achieved by grazing irrigated small grains (oats, wheat and ryegrass) and slow growth rates are possible grazing native range pastures. Ryegrass (RG) nutrient quality indicates potential gains greater than 1.0 kg/d for steers, while typical winter native range (NR) pasture indicates gains of 0.45 kg/d or less. The purpose of this experiment was to quantify the impact of different programmed growth patterns on beef retail product especially size, marbling and tenderness.

Holstein bull calves can produce a 250 kg carcass at 11 to 12 months of age on indoor feeding of ad libitum concentrates. An outdoor period at pasture would reduce housing costs. Two experiments were undertaken to determine the effect of an outdoor period at pasture on concentrate intake, liveweight gain and selected carcass traits of Holstein young bulls.

This study is set out to evaluate the effects of callipyge (CLPG) gene, attributed to sheep affecting growth and meat quality, on carcass and sensory trait of most preferred meat-type lamb (Kıvırcık, Karacabey Merino, Ramlıç, German Black-Head Mutton × Kıvırcık, Hampshire Down × Merino) in the western part of Turkey. Environmental sources of infection can play a primary role in shaping epidemiological dynamics; however, the relative impact of environmental transmission on host-pathogen systems is rarely estimated. We developed and fit a spatially explicit model of African swine fever virus (ASFV) in wild boar to estimate what proportion of carcassbased transmission is contributing to the low-level persistence of ASFV in Eastern European wild boar. Our model was developed based on ecological insight and data from field studies of ASFV and wild boar in Eastern Poland. Many wildlife management situations require the disposal of animal carcasses. These can include the lethal removal of wildlife to resolve damage or conflicts, as well as clean-up after mortalities caused by vehicle collisions, disease, oil spills (Figure 1) or other natural disasters. Carcasses must be disposed of properly to protect public sensitivities, the environment, and public health. To continue the series that began in 1994, the National Beef Quality Audit (NBQA) – 2016 was conducted to quantify the quality status of the market cow and bull beef sector, as well as determine improvements made in the beef and dairy industry since 2007. The NBQA-2016 was conducted from March through December of 2016, and assessed hide-on carcasses (n = 5,278), chilled carcasses (n = 4,285), heads (n = 5,720), and offal items (n = 4,800) in 18 commercial processing facilities throughout the United States. The Influences Of Feeding Broilers On Graded Inclusion Of Sunflower Meal With Or Without Avizyme On Growth, Protein And Energy Efficiency, Carcass Traits, And Nutrient Digestibility, Mahmoud Alagwany, Adel Attia, Zenat Ibrahim, Mohamed Abd El-Hack1, Muhammed Arif, Mohamed Emam

The present study aimed to investigate the substituting effect of sunflower meal (SFM) for soybean meal (SBM) with or without supplemental Avizyme on growth performance, protein and energy efficiency ratios, carcass traits, and nutrient digestibility of broiler chickens. A 4 × 2 factorial design experiment was conducted with four levels of SFM replacing SBM (0%, 25%, 50%, 75%) and two levels of supplemented Avizyme (0 or 0.1 g/kg diet). Results revealed that increasing SFM substitution for SBM up to 50% was associated with an increase in body weight (P < 0.01). Daily weight gain was statistically (P < 0.01) enhanced with increasing SFM up to 50% through 22 to 42 and 7 to 42 days of age. Feed conversion ratio improved (P < 0.01) in groups given SFM at 25% and 50% compared to the control. No carcass values were affected by SFM inclusion or Avizyme. The inclusion of 25% or 50% SFM increased (P < 0.01) protein efficiency at periods of 7?21 and 22?42 days of age. Energy efficiency ratio improved (P < 0.01) due to SFM incorporation at levels of 25% or 50% in all periods. The interaction effect between SFM and Avizyme was not significant on a majority of studied parameters. The digestion coefficients of crude fiber, N-free extract, and organic matter increased (P < 0.05 or P < 0.01) with increased levels of SFM. In conclusion, the incorporation of SFM as a substitute for SBM in broiler diets improved the growth performance of broilers. The use of SFM up to 50% without Avizyme supplementation could be recommended in broiler diets from 7 to 42 days of age.

The National Beef Quality Audit-2016 (NBQA-2016) was conducted to assess current transportation, mobility, and quality characteristics of U.S. fed steers and heifers. Data were collected at 17 beef processing facilities between March and November 2016. About 8,000 live cattle were evaluated for transportation and mobility, and about 25,000 carcasses were evaluated on the slaughter floor. Cattle were in transit to the slaughter facility for a mean duration of 2.7 h from a mean distance of 218.5 km using trailers with dimensions ranging from 17.84 m2 to 59.09 m2. Wind energy development can negatively impact bird populations due to bird–turbine collisions. To accurately estimate bird mortality at wind farms, the number of dead birds found under turbines is commonly corrected for carcass removal by scavengers, which is quantified by measuring persistence of experimental carcasses through time. These studies often use domestic birds as surrogates because carcasses of wild birds (e.g., raptors) are difficult to obtain. Yet few details are known about the purpose or purposes of social interactions near carcasses and their role in the physical depletion of carcasses (Gangoso et al. 2013). Growth and carcass characteristics of Honamlı, Hair, and Honamlı x Hair crossbred goat kids were investigated in this study. Seven kids, having live weights between 25 and 30 kg, were slaughtered. It was found that the live weights of Honamlı, Hair, and Honamlı x Hair kids were 3.90 kg and 27.50 kg, 3.04 kg and 16.91 kg, and 3.58 kg and 22.07 kg at birth and on the 120th day, respectively. Honamlı kids had higher body measurements, as well as birth and live weights, when compared to the other genotypes. Zinc is an essential mineral required for normal function of more than 300 enzymes in microorganisms, plants, and animals. Zinc-requiring enzymes participate in metabolism of nucleic acids, proteins, and carbohydrates, all of which are essential for growth of cattle. In addition, zinc is necessary for normal development and function of the immune system. Twenty-four male lambs (24.93 ± 0.93 kg) were used in order to evaluate the effects of chromium methionine (Cr) supplementation in high-energy finishing diets on the carcass characteristics and chemical composition of the longissimus muscle (LM). Treatments were 0.00, 0.60, 1.20, and 1.80 mg Cr/lamb daily. The experiment lasted 56 days. There were no effects of treatments on dry matter intake, feed to gain ratio, and final weight, which averaged 35.24 ± 1.01 kg. Supplemental Cr linearly decreased fat thickness enough to improve the estimated yield grade from 1.82 to 1.42 with no effect on the other carcass traits measured. …

The first objective of the current study was to evaluate genetic trends from 10 years of the American Brahman Breeders Association Carcass Evaluation Program from 2004 to 2013. Changes of performance in growth, carcass composition, and carcass quality traits were evaluated. Overall means were calculated to report the total average for each trait along with an average rate of change per year. The objective of this study is to evaluate the association of single nucleotide polymorphisms with growth, performance, and carcass quality and composition characteristics in a population of cattle consisting of multigenerational Angus sired calves and modern characteristic Charolais sired calves. A total of 132 calves were evaluated. Due to a limited sample population statistical difference was set at p ˂ 0.05 and statistical trends were set at p ˂ 0.1. Mean birth weights were significantly higher for Charolais sired calves as compared to Angus sired calves. This study was conducted to evaluate the effect of substitution of soybean meal (SBM) with dehulled-micronized peas (Pisum sativum) in diets of guinea fowl broilers on their growth performance, carcass yields, and fatty acid composition of meat. One hundred forty 1-d-old guinea fowl keets were randomly assigned to 2 dietary treatments, which were fed from hatch to 12 wk. The birds were fed 2 wheat middling-based diets comprising a control diet, which contained SBM (78 g/kg) and a test diet containing dehulled-micronized peas (180 g/kg) as the main protein source. The overall aim of this study was to determine if carcass ultrasonography in replacement heifers could explain variation in traits such as reproduction, a major factor in beef cattle efficiency and profitability. Market lambs from the state fair of Virginia (n = 172) were ultrasonically evaluated by 4 scan technicians and 3 image interpreters to determine accuracy of ultrasonic estimates of loin muscle area (ULMA), backfat thickness (UBF), and body wall thickness (UBW). Lambs were initially scanned at the preferred magnification setting of each technician; 2 chose 1.5× and 2 chose 2.0×.
