The primary purpose of this study was to explore students’ perceptions of a servicelearning course at a small, rural, state college. Throughout the semester-long course, the students learned about how to improve afterschool programs and childhood obesity in rural areas similar to the community that encompassed them. The class format consisted of both online discussions over articles, along with in-person meetings. Students then had the option to participate in a paid service opportunity to apply their knowledge in an after-school program; however, no students took part in this component of the class. Background: The rate of overweight and obesity among adolescents aged 12-19 years has quadrupled since 1980. Reducing obesity is a key public health priority, as obesity is associated with individual and population-level health and economic consequences. Afterschool-based obesity prevention programs that aim to develop nutrition and culinary self-efficacy have shown promise. However, the level of aptitude among program instructors is directly correlated with student success, suggesting the importance of effective train-the-trainer (TTT) mechanisms for implementing and scaling up these strategies.

Current research has suggested that supportive healthy eating and physical activity (HEPA) policy and practice environments play a significant role in shaping the physical activity levels and eating habits of youth. Subsequently, a wide array of audit tools assessing policy and practice environment characteristics across settings that care for youth were developed. However, the extent that available audit tools accurately reflect the policy environment characteristics of the settings that care for the youth population remains unknown.
