Dr. Børsheim will present her research on the important of exercise and nutrition in early life. In her presentation Dr. Børsheim will focus on childhood obesity and show that this can increase risk for later life metabolic dysfunction. She will discuss if physical fitness can attenuate negative effects of obesity in children and if there are critical windows of development where physical activity is of specific importance. Finally, she will present data on impact on early physical activity and nutrition on response to exercise later in life.

The purpose of this quasi-experimental study was to evaluate the effects of two farm-to-school programs, specifically the Field-to-Fork Multi-visit Program (N  =  264) and the Field-to-Fork After-school Club (N  =  56), on nutritional outcomes of elementary school students (third to fifth grade) from urban, diverse, and lower-income communities. Data were collected via self-report surveys measuring: (a) knowledge of recommendations for daily fruit and vegetable intake; (b) fruit and vegetable consumption; (c) knowledge of cooking a healthy recipe using vegetables; and (d) desire for farm fresh foods at school. This review resulted from an international workshop and presents a consensus view of critical advances over the past decade in our understanding of follicle function in ruminants. As higher education becomes more attainable to all populations, college students from low-income backgrounds are at an increased risk of food insecurity due to the financial burdens that come with the transition to college. Food insecurity on U.S. college campuses ranges up to 59%, quadrupling the average national household food insecurity rate of 14%. In college students, food insecurity is correlated with unhealthy eating, alcohol use, and mental health issues.

Age-related brain iron accumulation is linked with oxidative stress, neurodegeneration and cognitive decline. Certain nutrients can reduce brain iron concentration in animal models, however, this association is not well established in humans. Moreover, it remains unknown if nutrition can moderate the effects of age on brain iron concentration and/or cognition. Here, we explored these issues in a sample of 73 healthy older adults (61-86 years old), while controlling for several factors such as age, gender, years of education, physical fitness and alcohol-intake. Purpose of review

Computing advances over the decades have catalyzed the pervasive integration of digital technology in the medical industry, now followed by similar applications for clinical nutrition. This review discusses the implementation of such technologies for nutrition, ranging from the use of mobile apps and wearable technologies to the development of decision support tools for parenteral nutrition and use of telehealth for remote assessment of nutrition.

Background: The Special Supplemental Nutrition Assistance Program for Women, Infants, and Children (WIC) is a federal nutrition program that provides nutritious food, education, and health care referrals to low-income women, infants, and children up to the age of 5 years. Although WIC is associated with positive health outcomes for each participant category, modernization and efficiency are needed at the clinic and shopping levels to increase program satisfaction and participation rates. New technologies, such as electronic benefits transfer (EBT), online nutrition education, and mobile apps, can provide opportunities to improve the WIC experience for participants.

The present bibliometric analysis studies the nutrition research activity in India. Research articles published during the years 1980-2020, under the “nutrition and dietetics” domain were retrieved from ISI Web of Science database. Entirely, 2,704 articles by 12,514 authors were identified. Karnataka published maximum papers, while USA emerged as the prominent collaborating country. An increasing trend for the number of publications and International collaborations was observed over the years. This research project investigates the diets of various sport athletes at the University of Rhode Island. The question that this project aims to answer is if our athletes are meeting recommended daily values nutritionally, and if not, why? Research continues to grow regarding how performance implications are tied to varying nutritional disparities for athletes. Various studies show malnourishment leads to performance decline, increased injury risk, and improper recovery. With the ongoing COVID-19 pandemic causing college campuses, restaurants, and businesses to shut down, many college students found themselves having to return home or find alternative food resources. Due to these factors, it was imperative to examine how college student’s eating habits have changed throughout the pandemic, dealing with lots of stressors, and whether having prior education on nutrition influenced those eating habits. The uses of vegetable oils are determined by functional properties arising from their chemical composition. Soybean oil was previously used in margarines and baked foods after partial hydrogenation to achieve heat and oxidative stability. This process, however, generates trans fats that are now excluded from food use because of cardiovascular health risks. Also present in soybean oil are the anti-oxidant tocopherols, with α- tocopherol (vitamin E) typically present as a minor component compared to γ-tocopherol. Genetic improvement of the fatty acid profile and tocopherol profile is an attractive solution to increase the functional and health qualities of soybean oil. The …

Protein derived from pollen is an essential component of healthy bee diets. Protein content in honey bee foraged pollen varies temporally and spatially, but the drivers underlying this variation remain poorly characterized. We assessed the temporal and spatial variation in honey bee collected pollen in 12 Michigan apiaries over 3 summers (2015–2017). We simultaneously monitored forage in flowering habitats (uncultivated floristically-rich areas and conservation program land) near these apiaries throughout the growing season. Use of systems science can improve the dissemination and implementation (D&I) process. However, little is known about use of systems science in nutrition D&I research. The purpose of this article is to synthesize the ways in which systems science methodology is applied in nutrition D&I research. Scoping review methodology involved searching 6 academic databases for full-text, peer-reviewed, English articles published between 1970 and 2020 that employed systems science within nutrition D&I research. Data extraction included intervention type, population, study aim, methods, theoretical approach, outcomes, and results. Descriptive statistics and qualitative thematic analysis followed. Polar bears possess morphologic and physiologic characteristics that reflect their terrestrial lineage as members of the bear family (Ursidae) as well as adaptations to the Arctic marine environment. Among marine mammals, they are the least adapted for aquatic life. They exhibit substantial seasonality in body mass, body condition, and many physiological functions, reflecting the annual cycle of both their Arctic sea ice habitat and the availability of their main prey, ringed seals. This hypercarnivorous diet has likely influenced the polar bear’s craniodental morphology and nutritional physiology.
