The nutrient concentration of fruits and vegetables in the U.S.A. has declined in the past 50–70 years. Crop management practices utilizing on-farm inputs are thought to increase crop nutritional quality, but few studies have evaluated this under long-term side-by-side trials. An experiment was conducted from 2004 to 2005 at Rodale Institute’s long-term Farming Systems Trial to investigate the nutritional quality of vegetables under organic manure (MNR) and conventional (CNV) farming systems, with or without arbuscular mycorrhizal fungi (AMF) treatment. AMF reduced the vitamin C content in carrots in both systems in 2004, but the reduction was 87% in CNV and …

Concentrate (grain) should be considered only as supplements to good quality hay. In general, a mature horse does not require the energy provided by concentrate-type feeds (grains/sweet feeds, pelleted feed, etc.) unless the horse is used for more than light work or in production, such as a lactating mare or a breeding stallion. Too many times horses are overfed rather than underfed. This fact sheet will help horse owners understand the digestive process and the general feeding requirements, including different grains and mixed grains, for their horses.

Nutrient timing involves manipulation of nutrient consumption at specific times in and around exercise bouts in an effort to improve performance, recovery, and adaptation. Its historical perspective centered on ingestion during exercise and grew to include pre- and post-training periods. As research continued, translational focus remained primarily on the impact and outcomes related to nutrient consumption during one specific time period to the exclusion of all others. Additionally, there seemed to be increasing emphasis on outcomes related to hypertrophy and strength at the expense of other potentially more impactful performance measures. Low Income And Access To Healthy Food: The Case Of Milk, Jeffrey Young, James K. Binkley

Even with abundant dietary research and knowledge about healthy eating, there is still a considerable shortfall in dietary quality of low-income households in the US. Chen et al. (2012) proposed that this problem is at least in part due to low-income individuals’ having less expected future earnings and thus, reduced incentive to pursue longevity by means of healthy eating. We further their analysis, offering improvement by controlling for access to low-fat milk. We find that even when allegedly crucial factors such as cost and access are not issues, relative purchasing of low-fat milk is still linked to higher income.

College students face high levels of stress throughout the semester, but how is that impacting their behavior? Objective: To assess spending by beneficiaries of Benazir Income Support Programme on monthly food commodities, and contribution of the cash grant programme on purchase of nutritious foods.
Methods: The descriptive cross-sectional survey of households enrolled in the Benazir Income Support Programme was conducted during July and August, 2013, in Matiari district of the Sindh province of Pakistan. Monthly household food expenditure on food commodities and use of the cash grant on type of food purchased was assessed through structured interviews of the beneficiaries. Depression is a major clinical concern, having a complex onset and the presence of multiple, often unidentifiable causes. Depression affects millions of individuals worldwide, with a high prevalence in regions of the world with a Western-style diet as compared to regions with a Mediterranean diet. A Western-style diet consists of foods high in sugar, fat, and processed meats and grains, whereas the Mediterranean diet contains significantly more vegetables, fruits, lean meats, and whole grains. Background. Complementary feeding practices include what, when, and how to feed (Birch and Doub, 2014). The gradual transition from feeding exclusively human milk, formula milk, or a combination of both to complementary foods over the first 24 months of life is necessary to ensure proper growth and development (Dewey, 2001; Pearce & Langley-Evans, 2013). While research does exist on complementary feeding, such as infant diet composition, limited research exists on exploring complementary feeding practices from first-time mothers’ experiences.

Approximately 15 million children under age 6 are in childcare settings, offering childcare providers an opportunity to influence children’s dietary intake. Childcare settings vary in organizational structure – childcare centers (CCCs) vs. family childcare homes (FCCHs) – and in geographical location – urban vs. rural. Research on the nutrition-related best practices across these childcare settings is scarce. The objective of this study is to compare nutrition-related best practices of CCCs and FCCHs that participate in the Child and Adult Care Food Program (CACFP) in rural and urban Nebraska. To understand the impact sports nutrition knowledge has on the risk for developing LEA in Female Cross Country Runners.
Background
The International Olympic Committee introduced the concept of Relative Energy Deficiency in Sports (RED-S) to accurately encompass the condition previously known as the Female Athlete Triad. LEA is the root cause of RED-S. (Mountjoy et al., 2014). The purpose of this study was to measure sports nutrition knowledge and the impact knowledge level has on the susceptibility to develop LEA in female cross country runners.

Background. There are an estimated 2.7 million children living within institutionalized care worldwide. This review aimed to evaluate currently available data on the nutrition status of children living within institutionalized care.
Methods. We searched four databases (Pubmed/Medline, CINHAL Plus, Embase and Global Health Database) for relevant articles published from January 1990 to January 2019. Studies that included information on anthropometry or micronutrient status of children living within institutionalized care were eligible for inclusion. The review is registered on PROSPERO: CRD42019117103.
Results. From 3,602 titles screened, we reviewed 98 full texts, of which 25 papers were eligible. Two (8%) studies reported …

Electric Programmable Pressure Cookers, such as the "Instant Pot, are being used for small batch pressure canning. This fact sheet explains research showing why this is a food safety hazard, with a high risk of producing home canned foods that could develop the deadly botulism toxin. This course provides students with a farmer’s perspective on the sustainable management of cows, sheep and goats on a small farm. The course provides students with a clear understanding of how to think through the planning and management of cows, sheep and goats for meat production. All aspects from purchasing and nutrition to marketing and finances will be addressed. This course also brings awareness to the U.S. meat industry and supports students in becoming educated consumers and producers. Students will walk away with a rudimentary plan on how to incorporate ruminants into their small farm plan.
