International Journal of Exercise Science 17(2): 648-659, 2024. This study aimed to investigate the effects of chronic β-alanine (βA) plus acute sodium bicarbonate (SB) co-supplementation on neuromuscular fatigue during high-intensity intermittent efforts in swimming. Eleven regional and national competitive-level young swimmers performed a neuromuscular fatigue assessment before and immediately after two 20 × 25-m front crawl maximal efforts every 90 s, performed at pre- and post-4-week co-supplementation. Neuromuscular fatigue was evaluated by percutaneous electrical stimuli through the twitch interpolation technique on the triceps brachii and quadriceps femoris. Objective: Dietetics education transitioned to competency-based education (CBE) in July 2022. Despite its benefits, managing competencies may be a challenging aspect of CBE for dietetics program and internship directors (PDIDs), yet it is unclear what specific aspects of competency management are difficult. Using design thinking, this study sought to capture the impact recent CBE implementation had on PDIDs by identifying specific pain points (i.e., challenges) related to competency management. The results of this work serve to document such pain points and may be used to generate solutions to address or eliminate the pain points. For example, this research can support …

America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Fifty-six percent of school-aged children participate in team sports, yet there is limited evidence on how participation in youth sports impacts the dietary behaviors of participants and their families. Our team surveyed parents and caregivers of children participating in recreation league youth sports (n = 178) to assess the foods and beverages offered as team snacks and factors that influence team snack choices. Juice was the most popular beverage, and crackers were the most popular snack reported by parents. Convenience, followed by cost and child preference, were the most frequently reported factors influencing team snack choices. Survey items also included …

Background: This study aimed to examine what reasons motivated urban high school students to choose certain foods, and to identify factors associated with food choice motivations.
Methods: A cross-sectional study was conducted from April to May 2020 in Depok, Indonesia. A total of 433 high school students in grades 10–12 were recruited. Food choice motivations were identified using a questionnaire, and defined using exploratory factor analysis. Possible factors associated with motivations were evaluated using multiple linear regression.

Objective: The effects of ginkgo powder on the physicochemical indexes of wheat flour, as well as the nutrition, sensory, texture, cooking quality and bacteriostasis of noodles were studied. Methods: The physicochemical, nutritional and microbial indexes of flour and noodles were determined by instrumental analysis and chemical analysis respectively. And the sensory indexes of noodles were evaluated by sensory method. Results: The results showed that adding 0~18% ginkgo powder to wheat flour could reduce dough stability time, falling number wet and gluten content. Abstract: The purpose of this collective case study was to explore the diffusion of interprofessional education (IPE) in response to specific Future Education Model (FEM) Graduate Program accreditation standards and performance indicators. Data were collected via semi-structured interviews with a purposive sample of 12 FEM program directors from geographically diverse US states. Website and document review were triangulated with the interview data, and Roger’s Diffusion of Innovation (DOI) was used as a theoretical framework to add dimension to the study. Kentucky has the highest incidence and mortality rate of all site cancers, and Kentuckians residing in the Appalachian region often have worse outcomes, where cancer is a leading cause of death. Focusing on colorectal cancer (CRC) specifically, Kentucky ranks first nationwide for incidence (50 cases per 100,000 people) and fifth for mortality (about 17 deaths per 100,000 people). The Kentucky Colon Cancer Screening Program increased screening rates and reduced mortality since its launch. Yet, CRC remains a leading cause of death for Kentuckians. Our program aimed to increase knowledge related to fermented foods. Over 400 stakeholders registered for a webinar series that focused on defining fermented foods, health benefits of fermenting foods, and the safety of fermented foods. Participants indicated increases in knowledge and overall satisfaction with the content of the fermentation curriculum. The impact of the COVID-19 pandemic on the program outcomes are discussed.

Stakeholders sought to reduce the burden of preventable diabetes among adults in Utah via a “Food as Medicine” webinar series. The “Food as Medicine” webinar series sought to increase awareness of and enrollment in public diabetes programs. Evaluation results from the webinar series indicated an increase in awareness of diabetes programs and nutrition information needed to improve personal diabetes management.

During the last six to seven decades, broilers have been successfully selected for maximum growth and feed efficiency (Zuidhof et al., 2014). Modern fast-growing broilers reach a body weight of 2.0 to 2.5 kg in 35 to 45 days with an average daily growth of 55 or more gram a day (Augère-Granier, 2019). In a study with different broiler strains representative of broilers in 1957 or 1978 were compared with a broiler strain from 2005 (Zuidhof et al., 2014). Sub-therapeutic doses of antibiotics were used in poultry production since the 1950s for improved production, prophylaxis, and animal welfare. Extensive and indiscriminatory use of antibiotics led to the emergence of antibiotic resistance in food-borne pathogens of public health significance (Jones & Ricke, 2003). As per the United States Centre for Disease Control, more than 2.8 million infections in 2019 were caused by multidrug resistant bacteria. Due to public health concerns, the use of antibiotic growth promoters in livestock production was prohibited by Sweden and Denmark in 1986 and 1998 respectively (Hammerum et al., 2007). Because FCS agents teach communities about dietary guidelines, it is important that they are aware of the latest nutrition research. This study assessed FCS agents’ knowledge of popular fad diets (low-carbohydrate, intermittent fasting, detoxes and cleanses) and their potential adverse effects, and its relationship among location, certifications, years of experience, professional association memberships, and education. Agents in Louisiana, Texas, Arkansas, and Mississippi were emailed a survey. RDN, DTR, and CHES certifications had significant associations (p = 0.03) with knowledge of adverse effects of fad diets. Agents who hold these credentials may have more knowledge about adverse effects of fad diets.

International Journal of Exercise Science 15(6): 455-472, 2022. The effect of a pre-workout supplement on anaerobic power output and muscular fatigue was examined. 18 participants took part in this double-blinded crossover study, reporting for testing on 3 occasions. Participants completed a 6x6 second repeated sprint test, with 20s recovery between sprints. Anaerobic power output was recorded as the highest power achieved during sprint test. Muscular fatigue was reported as a fatigue index across the six sprints ((maximum power – minimum power) ÷ total sprint time). The web amount and quality of web-weaving of two spider species, Agelena labyrinthica (Clerck, 1757) and Holocnemus pluchei (Scopoli, 1763), were determined depending on the temperature and the amount of food consumed. Two different experiments were set up in the study. In the first one, the spiders were raised at different temperatures (20-25 °C and 25-30 °C) under laboratory conditions and they were fed with 10 Drosophila melanogaster (Diptera: Drosophilidae) each time. Food insecurity is a growing issue in developing and developed countries alike, and in countries like Belize, the prevalence of hunger has soared in recent years. Not having access to diets with sufficient calories and nutrients leads to a host of developmental issues, including stunting and cognitive delays. The purpose of this work was to create an all-encompassing manual for small-scale poultry production in order to provide nourishment for the students and staff of a school in Belize.
