This educational handout focuses on delivering the concept of Mindfulness to adolescent young women when choosing healthier food choices alongside appropriate portion sizes recommended by the 2,000 kcal/diet MyPlate Plan. Chronic kidney disease (CKD) is a major public health concern with rising prevalence. Vitamin D deficiency (/mL) and insufficiency (20–29 ng/mL) are common among patients with CKD undergoing dialysis. The objective was to review current research on vitamin D supplementation for dialysis patients and the effect on their serum vitamin D levels.

In Fall 2019, the Computational Neuroscience class at Bates College collaborated to begin an open textbook. Eight students across three majors collaborated to present the content they were learning to students who were similar to themselves. This project serves both pedagogical and social goals. By writing for fellow students, we leveraged the power of teaching for learning. By bringing together students of diverse academic backgrounds, we leveraged the power of peer instruction. Finally, by writing in the open, students not only brought their best work forward, but are working to contribute to an open knowledge environment that democratizes information. This …

After working as a food service director in both rural and metropolitan districts in Illinois, Theresa accepted a position as an Education and Training Specialist at the Institute of Child Nutrition, where she has been for the past twenty years.
