The Impacts Of The Covid-19 Pandemic On The Food Security Of Mississippians, Hannah Noel Irwin

Mississippi leads the United States in food insecurity, with 15.3% of Mississippians experiencing food insecurity in a given year. To determine the impacts of the COVID-19 pandemic on the food insecurity of Mississippians, a survey containing the USDA Household Food Security Questionnaire was distributed to adult Mississippi residents. By employing the USDA Household Food Security Scale and the Foster-Greer-Thorbecke Methodology, this study finds that the food insecurity rate, food insecurity gap, and squared food insecurity gap have worsened in Mississippi since the beginning of the COVID-19 pandemic. Viruses are the most abundant biological entities on the planet. A virus is a collection of essential genetic material encapsulated in a protein coat that is incapable of replicating without a host. A virus must inject its genetic material into a suitable host cell to utilize host machinery to replicate. During the process of replication, a virus hijacks cellular functions, avoids or inhibits host antiviral defenses, and sometimes causes disease in the host organism. SARS-CoV-2 is the virus responsible for the current global pandemic, COVID-19. Because this virus is novel, little is known about its sensitivity to disinfection. In this study, we performed suspension tests against SARS-CoV-2 using three commercially available quaternary ammonium compound (Quat) disinfectants and one laboratory-made 0.2% benzalkonium chloride solution. Three of the four formulations completely inactivated the virus within 15 seconds of contact, even in the presence of a soil load or when diluted in hard water. We conclude that Quats rapidly inactivate SARS-CoV-2, making them potentially useful for controlling SARS-CoV-2 spread in hospitals and the community. In addition to …

Background SARS-CoV-2 is the virus responsible for the current global pandemic, COVID-19. Because this virus is novel, little is known about its sensitivity to disinfection. The prevalence and spread of the current COVID-19 pandemic have highlighted the importance of continual improvements upon current microbiological testing methods. Rapid and accurate testing can help mitigate spread by improving on the time to quarantine and quarantine duration required. As of the writing of this thesis, COVID-19 has been responsible for more than 500,000 deaths in the United States of America, and greater than 2 million deaths globally.
