Between January 1, 1947, and December 31, 1950, hourly temperature and relative humidity and daily precipitation and cloud cover data were collected at the 1,460 ft., 3,850 ft., 5,000 ft., and 6,300 ft. elevations in the Great Smoky Mountains National Park. These four years were part of a period of data collection extending from January, 1946, through March, 1951. These data were processed by a digital electronic computer, IBM 7040, under the control of data summary and potential evapotranspiration programs. This thesis reports the results of an investigation of environmental modifications of bluegill (Lepomis macrochirus Rafinesque) in Chilhowee, Loudon, and Norris Reservoirs. The three reservoirs are located in the Tennessee River drainage system.

The investigation was carried out between the spring of 1968 and the fall of 1969. Collecting was done by angling using both natural and artificial bait.

The evidence obtained by the investigation indicated significant differences occurred in the meristic and morphometric characters of the three bluegill populations when the data was tested statistically. It is concluded that the differences detected were probably due to environmental forces, …

The purpose of this experiment was to determine if the amount of urea could be increased above 10 pounds per ton of corn silage without adversely affecting the acceptability of the silage or the feedlot performance of feeder heifers.

One hundred and eight feeder heifers with an average weight of 450-500 pounds were involved in a two-year experiment conducted at the University of Tennessee's Blount Farm, Knoxville. Three treatments with 10, 15 and 20 pounds per ton of urea treated corn silage were used in this two-year study.

Personnel training and employment needs in 25 selected Tennessee hospitals were studied. Information from this pilot research will be used to develop methods and procedures for conducting similar studies of the food service industry in the future.

Following a preliminary survey by mail to identify the sample desired, personal interviews were scheduled with the hospital administrator and the food service manager in each of the selected hospitals.

Two feeding trials, one in 1967-68 and the other in 1968-69, were conducted at the University of Tennessee's Blount Farm to determine the effect of feeding different amounts of concentrates with urea-limestone treated corn silage on the performance and carcass characteristics of feeder heifer calves. A total of 288 animals were involved in the study. Treatments included delaying the feeding of a 6 lb. concentrate supplement for 0 (control), 56, 84, 112, 140 and 168 days during a period of high roughage feeding. The purposes of this study were to evaluate the diets of preschool children in selected kindergartens of Knox County, Tennessee; to determine the bone densities and other parameters of growth of these children; and to study the relationships that exist between diet and these measurements.

The subjects for the study were 142 children enrolled in four Head Start centers and two private preschools in the Knoxville area. The short-term growth response of etiolated pea stem segments (Pisum sativum L., var. Alaska) was investigated using a high-resolution growth recording device. The immediate effect of treatment with indoleacetic acid (IAA) is an inhibition of growth. This inhibition lasts about 10 minutes and then the rate of elongation rises abruptly to a new steady rate about 4 times the rate of elongation before auxin treatment. This rapid steady rate of elongation, however, continues for only about 22 minutes before declining suddenly to a lower steady rate of growth about 2 times the rate of elongation before the addition of auxin. …

The effects of two heat treatments on cooking time, total cooking losses, energy consumption, meat tenderness, and collagen-solubility in 0.1 N NaOH and Ringer's solution were studied using five pairs of top round roasts obtained from three Hereford steers. One roast from each pair was cooked at 200⁰F and the other at 300⁰F to an end point of 158⁰F in the center of the semimembranosus muscle.

Semimembranosus muscles roasted at 200⁰F required longer cooking times per pound, had higher total cooking losses, consumed more energy, and were more tender than pair mates …

Shortening power and related properties of lard as affected by substitution of elaidinized lipid were investigated. Pastry wafers were prepared with shortenings of 0, 40, 60 and 80 percent levels of substitution of elaidinized lipid for lard. The shortenings were analyzed by gas-liquid and thin-layer chromatography. Penetrability of the worked fats and melting points were determined. Breaking strength of the wafers was measured on a Bailey Shortometer and indexes to flakiness and flavor. Extent of oxidation was estimated with a thiobarbituric acid (TBA) test.

One hundred and twenty market hogs were used to study the effects of delayed slaughter and methods of decreasing liveweight shrinkage and deterioration of the quantitative and qualitative traits of pork carcasses. All hogs were secured from a commercial feedlot and slaughtered under commercial conditions.

Groups were held for 0, 24, 48, and 72 hours without feed. Two other groups were held for 72 hours with limited feeding to decrease liveweight shrinkage. Water was provided to all groups ad libitum.

³⁵S-sulfolipid was isolated from weanling rat brains and incorporated into a diet which was fed to rats for a period of nine days during which time urine and feces were collected daily in the initial study and continuously during the second phase of the study. The ³⁵S-sulfur from the sulfolipid was poorly absorbed, 20 percent of the ingested dose was excreted in the urine and 55 percent in the feces. The amount of radiation excreted in the urine plateaued after the third day with no significant difference occurring until the ninth day when there was a 96 percent …

Seven diets which were low in sulfur containing amino acids but with inorganic sulfate from 0.0002 percent to 3.130 percent in systematic increases were fed to rats. The sulfur as sulfate in freeze-dried and combusted lungs and livers of these rats was determined.

The data obtained showed a significant difference in both the amount of total sulfur in the lung as sulfate and the sulfur per mg. of dried lung. However, no significant difference was found in the total sulfur as sulfate in the liver or sulfur as sulfate per mg. of .dried liver. Since there is a high percentage …

During 1968, a quantitative and descriptive field study was made in a 23 acre woodland on a population of the eastern box turtle. The area was systematically searched and turtles were repeatedly collected, marked, weighed, and released. Trees were marked at 256 foot intervals so that the exact location of captured turtles could be recorded. A trailing device was used to study movements of some turtles.

Smaller turtles were found to be more active in the fall as 37.3 percent of the turtles captured during September and October weighed less than 300 grams as compared to 23.3 percent during July …
