PROBLEM A: CHARACTERISTICS OF MARSHALL COUNTY BEEF PRODUCERS AND THEIR FARMS

This study was made in Marshall County, Tennessee, to determine the characteristics of Marshall County Beef producers and their farms. The study was based on a survey-type interview and reflects information for developing a county plan of action. The producers were classified into low, medium, and high groups, depending on the number of pounds of beef sold per cow in 1970.

A close analysis indicates that cattlemen interviewed in Marshall County had the following characteristics: (1) 60 percent were considered friendly toward the survey; (2) 58 percent were full-time …

The Effect Of Cow Weight , Fat Thickness And Body Measurements On The Subsequent Performance Of Her Calf, James Farley Murphey Iii May 1972

The Effect Of Cow Weight , Fat Thickness And Body Measurements On The Subsequent Performance Of Her Calf, James Farley Murphey Iii

Masters Theses

The production of the maximum pounds of beef at weaning is a subject of utmost importance to Tennessee cattlemen. They have been striving to achieve this goal mainly through increased cow size. Therefore, the objectives of this study were to determine the relationship between cow size as measured by weight, fat and body dimension and the performance of her calf.

Over a five-year period, records were obtained on 411 Angus and 328 Hereford cows and their calves. In Analysis I, included data were taken in 1967 through 1970 on each cow and her calf. These data were used to determine …

The Relationship Of Intramuscular And Subcutaneous Fat To The Physical And Chemical Composition And The Organoleptic Properties Of Beef, Kadhim Abdul Ruhman Khalil May 1972

The Relationship Of Intramuscular And Subcutaneous Fat To The Physical And Chemical Composition And The Organoleptic Properties Of Beef, Kadhim Abdul Ruhman Khalil

Doctoral Dissertations

One hundred and thirty-five steer and heifer carcasses were used to study the relationship of intramuscular and subcutaneous fat to the physical and chemical composition and to the organoleptic properties of beef. Steer carcasses ranging in USDA grade from high standard to high choice and heifer carcasses ranging from low to good to high choice were included.

A significant (P < 0.05) positive relationship existed between USDA carcass grade and taste-panel tenderness scores of 6-7-8th rib roasts. Grade, marbling and percent ether extract of longissimus dorsi muscle were each significantly (P < 0.05) related to juiciness scores of 6-7-8th rib roasts and club steaks. These relationships were not generally high and were somewhat inconsistent. Overall grade marbling or percent ether extract of l. dorsi muscle had almost the same influence on the east quality of beef. Eating quality was not significantly (P < 0.05) affected by fat thickness. For the 9-10-11th rib roasts from both sexes, percent separable fat was influenced more by fat thickness than by grade.

Percent protein content of cooked rib roasts had a significant positive influence on …

Stability And Acceptability Of Intermediate Moisture Textured Vegetable Protein, Helen Sy Yu Mar 1972

Stability And Acceptability Of Intermediate Moisture Textured Vegetable Protein, Helen Sy Yu

Masters Theses

This study was designed to develop a shelf stable and acceptable intermediate moisture product using dry extruded textured vegetable protein chunks as the food base. The water activity of the protein chunks was adjusted to 0.85 and 0.80 by cooking in solutions of sorbitol, sodium chloride, propylene glycol, sucrose and potassium sorbate. The effects of calcium lactate and a lower pH on the properties of the protein product were determined. Products prepared at 0.85 Aw consisted of four treatments: 1) without calcium lactate, pH 7.0; 2) without calcium lactate, pH 5.5; 3) with calcium lactate, pH 7.0, and 4) with …

Problem C: The Influences Of Assumptions And Values On Intercultural Interactions, Anthony C. Griffin Mar 1972

Problem C: The Influences Of Assumptions And Values On Intercultural Interactions, Anthony C. Griffin

Masters Theses

This study has attempted to draw together and more clearly define some of the cultural assumptions and values that may influence our behavior as human beings. More specifically, it has attempted to clarify how these assumptions and values may influence the behavior of individuals in cross-cultural situations.

Assumptions were defined as the predispositions people employ to explain and pattern the world in a rational manner. Assumptions are relatively vague and very difficult to define or measure. Values are the explicit reflections of cultural assumptions, and are relatively concrete, specific, and more easily explained or measured than assumptions.

Considerable emphasis was …

Starch Gelatinization As Affected By Lipid, Nina Sue Berry Mar 1972

Starch Gelatinization As Affected By Lipid, Nina Sue Berry

Masters Theses

Gelatinization of untreated and defatted corn starch as affected by added elaidinized and non-elaidinized olive oil was investigated. The experimental plan was a 2 x 3 factorial, which included no added lipid as well as elaidinized and non-elaidinized olive oil. The added lipids were used at the level of 6 mg per gram of starch in pastes containing 8 g of starch per 100 ml of liquid. Seven replications were completed. Suspensions were heated in the Brabender Amylograph from 25°C to 92.5°C (45 min) and held at 92.5°C for 15 min. Data taken from each amylogram included: the transition temperature, …

Problem B: Factors Associated With Levels Of Living Of The Elderly In Hamblen County, Tennessee, Anthony C. Griffin

Masters Theses

The purpose of this investigation was to identify some of the factors associated with the levels of living of elderly residents of Hamblen County, Tennessee. Levels of living were determined by the number of selected home improvements items possessed by each household.

Multiple regression analysis was the statistical tool used to assess levels of living. Possession of these home improvement items was analyzed according to 11 independent variables.

The variable "education of the female" accounted for approximately 18 percent of the variation in levels of living, and appeared to be the best overall predictor of variations in level of living …

An Empirical Analysis Of Herzberg's Motivator-Hygiene Theory, Bob Vernon Harris Mar 1972

An Empirical Analysis Of Herzberg's Motivator-Hygiene Theory, Bob Vernon Harris

Masters Theses

The purpose of this study was to investigate a relatively new and highly controversial theory of work motivation promulgated by·Dr.Frederick Herzberg . This theory, called the Motivator-Hygiene or Two Factor Theory, was based on information obtained using an open-ended, semi-structured interview technique. An extensive review of the literature indicated that all supportive studies were based on a similar technique; most studies using other techniques were non-supporting.

Using experience and information obtained in a pilot study, a 135-item performance specimen checklist was developed, validated, and administered to more than 100 students at a Tennessee vocational-technical training school. The test instrument was …
