Research poster describing UNE's Center for Excellence in the Neurosciences (CEN) K-12 outreach program. Founded in 2009 with three main areas of focus—research, scholarship and community outreach—CEN includes over 40 faculty members affiliated with neuroscience research and/or education. The Neuroscience Outreach Program was established in 2009 with the goal of bringing fun, interactive neuroscience lessons to schools to engage students in learning about neuroscience. UNE undergraduate and professional students present the lessons in classrooms with support from UNE faculty and staff.

Meal planning and cooking guide created to help people on food assistance and others better utilize their resources. This book contains health information, grocery shopping tips, meal planning guides, and easy instruction on cooking and the use of leftovers. With simple-to-read, image-based instruction, it teaches the basics on how to budget, plan meals, make shopping lists, and prepare food. The book assumes no prior cooking experience, and while anyone can benefit from the book regardless of income level, it makes a particular effort to demonstrate preparation for foods commonly acquired at food pantries.

Elcs In Ice: Cryo-Electron Microscopy Of Nuclear Envelope Limited Chromatin Sheets, Mikhail Eltsov, Sergey Sosnovksi, Ada L. Olins, Donald E. Olins

Nuclear Envelope-Limited Chromatin Sheets (ELCS) form during excessive interphase nuclear envelope growth in a variety of cells. ELCS appear as extended sheets within the cytoplasm connecting distant nuclear lobes. Cross-section stained images of ELCS, viewed by transmission electron microscopy, resemble a sandwich of apposed nuclear envelopes separated by ~30 nm, containing a layer of ordered chromatin fibers. EM Procedures: The ultrastructure of ELCS was compared by three different methods: 1) aldehyde fixation/dehydration/plastic embedding/sectioning and staining; 2) high-pressure freezing/freeze substitution into plastic/sectioning and staining; 3) high-pressure freezing/cryo-sectioning/cryo-electron microscopy. Countless marine species are invading new environments with devastating effects on the ecosystem, the local and global economy, and on human health. The frequency of marine invasions has been increasing in recent decades with a respective raised interest of invasive species in the scientific community, and the general public. The Aquatic Invasive Species class (MAR442) at the University of New England offers an informative overview of invasive species, targeting educated readers with a general interest in invasive species biology.
