The overall goal of this thesis project was to better understand the influence of preharvest management strategies at critical growth and development periods on beef performance and meat quality. This was accomplished through two primary objectives: 1) to investigate the effects of maternal prepartum dietary energy source during mid- and late-gestation on growth performance, carcass composition, and meat quality of offspring and 2) to compare the influence of two low stress weaning methods with conventional weaning on post-weaning performance and carcass characteristics of steers. The human intestine encompasses a vast community of microorganisms known as the gut microbiota that play a crucial role in maintaining health. Common perturbations such as changes in the normal diet, antibiotic treatment, and changes in environmental conditions can alter the gut microbiome. This can create dysbiosis in the gut leading to disease conditions. Therefore, it becomes important to determine the forces that influence the gut microbial ecology. Increasing levels of salinity in once-viable lands for crop production is a serious and growing problem in the Northern Great Plains. The objectives of this study were to determine the effects of saline soil on the microbial composition of plant roots and bulk soil, to measure metabolic changes in plant roots from saline soil, to determine the viability of root-associated microbes as inoculants to increase stress tolerance in plants, as well as determine the impact of saline soil on nitrogen cycling genes linked to greenhouse gas production. Effective and efficient chilling of beef carcasses will directly influence meat quality and consumer acceptance. Over the past century the United States’ meat industry has evolved, and spray chilling system have become common practice utilized by the beef industry. However, many of the chilling systems presently in use were designed to chill carcasses averaging lighter than the average beef hot carcass weight of today. Beef hot carcass weight has increased 68 kilograms from 1991 to 2019. Corn grain alternatives are often not used in finishing rations due to reduced caloric densities and reluctance to deviate from traditional methods. Along with optimum nutrition, cattle need to have proper implant strategies to reap maximum returns on investment. The adoption of genetically modified (GM) crops, the rise of ethanol production that produced an additional derived demand for corn, and the increasingly prominent position of corn and soybeans in crop rotations embody major changes in U.S. agriculture during the past decades. This study investigates the linkages among these developments in two ways. First, we look at how biotechnology and biofuels have influenced cropping system changes in the Corn Belt region of the United States, using state-level data from 2000 to 2019.
