Stunting and anemia remain the coexisting nutritional problems among Indonesian children. However, evidence of household-level food expenditure and its association with child stunting and anemia is limited. This study aimed to observe the association between household food expenditure typology and child stunting and anemia in Indonesia. Data was obtained from the 2007 and 2014 Indonesia Family Life Survey (IFLS). The household food expenditure, child nutritional status, and anemia were observed in 2007 and 2014. Latent class analysis was taken to identify the food expenditure pattern. Binary logistic regression was applied to analyze the association between household food expenditure patterns and …

Assessing Health Implications Of Monarch Butterfly Populations And Behaviors, Kira Goldman, Kelsey E. Fisher Dr.
Honors Scholar Theses
Pollinator populations have seen massive declines over the past decade due to anthropogenic activity and climate change posing serious threats to the health of humans and ecosystems (Ulyshen & Horn, 2023). As agents responsible for the production of about 35% of micronutrient rich food crops necessary for adequate nutrition to lead healthful lives and prevent nutrition associated diseases, pollinator decline is a public health concern (Aizen et al., 2009). Monarch butterflies (Danaus plexippus) serve as bio indicators for the health of pollinator populations because of their analogous habitat and food resources shared with many other pollinator species, including bees and …
Measuring Food Literacy Among Limited-Resourced Adults, Emelia Clement
Measuring Food Literacy Among Limited-Resourced Adults, Emelia Clement
LSU Doctoral Dissertations
Food literacy is the interrelated knowledge, skills and behaviors needed to plan and manage, select, prepare, and eat healthy food. It is positively associated with improved consumption of nutritious diets, and can be beneficial to limited-resource adults, who are often at risk for chronic diet-related diseases. Valid instruments for measuring food literacy in this population are scarce but urgently needed. The Eating and Food Literacy Behavior Questionnaire (EFLBQ) can be used to measure food literacy among limited-resource audiences.
Part one of this study aimed to determine the fitness of the EFLBQ to measure food literacy in limited-resource adults. A convenience …
The Influence Of Nutrition On The Gut Microbiota And Psychiatric Disorders: A Review, Megha Bhagavan, Francis Jenney
The Influence Of Nutrition On The Gut Microbiota And Psychiatric Disorders: A Review, Megha Bhagavan, Francis Jenney
Research Day
The symbiotic harboring of gut microorganisms within the gastrointestinal tract has a profound influence on host physiology, well-being, and disease pathology. More specifically, the gut bacteria are able to interact with dietary components from foods chosen by the host and consequently relay their beneficial or precarious effects locally and systemically. The gut bacteria have the capacity to maintain a healthy gut microbiome or perpetuate intestinal imbalance, known as gut dysbiosis. Gut dysbiosis has both local effects in gastrointestinal pathologies, such as intestinal bowel syndrome (IBS) and intestinal bowel disorder (IBD), as well as systemic pathologies, such as type II diabetes, …
Cenabis Bene: A Culinary Odyssey Through Apicius, Kathryn Atkinson
Cenabis Bene: A Culinary Odyssey Through Apicius, Kathryn Atkinson
Honors Scholar Theses
Apicius is the sole surviving cookbook from classical antiquity; as such it is invaluable for what it tells us about ancient feasting customs. Yet the gluttony typically associated with classical antiquity has no place in Apicius beyond the art that is inherently associated with food; we are not so much given a seat at the cena (dinner) as we are led into the kitchen, handed an apron, and instructed to cook. This critical analysis explores each recipe not only on the surface—i.e., examining the ingredients and recreating selected recipes—but also on a deeper level, lifting food above its concrete reality …

The Impact Of Nutrition On The Mental And Physical Health Of Young Adults, Dareena El-Far
The Impact Of Nutrition On The Mental And Physical Health Of Young Adults, Dareena El-Far
WRIT: Journal of First-Year Writing
Upon close examination by nutritional professionals, concern has arisen regarding the typical contents of a young adult diet. In terms of the rate at which young adults choose to consume nutritionally-dense food items, the rate at which nutrition-deficient junk food items are chosen over the former is significantly higher. Among further examinations of this issue by researchers, it has become evident that the nutritional decisions made by young adults are increasingly associated with several social, commercial, mental, educational, and economic influences. As a consequence of these factors, research has uncovered a connection between the consumption of a poor diet and …

The Most Environmentally Sustainable Diet For Adolescents In Terms Of Land Use, Food Waste, And Greenhouse Gas Emissions., Lina Elsehelly
Papers, Posters, and Presentations
The current food system is directly responsible for much environmental damage including severe climate change, biodiversity loss, and land scarcity. This research aims to find some strategies to mitigate these damages through diet by specifically targeting adolescents because they are potential problem-solvers. This period is also when personality and habits are articulated. By focusing on reducing greenhouse gas emissions, land use, and food waste, a more environmentally sustainable diet can be formulated. The key findings of the research can be summarized by reducing ultra-processed foods, choosing sustainably produced food, generally reducing meat consumption from the current rate, substituting red and …

Care For Some Lunch? It’S More Than Just Food! Care, Commensality And Pedagogic Meals In Irish Primary Schools, Caroline Mcgowan
Level 3
This expository article addresses a lacuna in policy and practice literature around using primary school lunches as both a pedagogical opportunity and a space to expose children to social and cultural ‘rituals’ that model both care and food sharing as commensality. The article argues that policy literature in this space broadly tends to be concerned with a medicalised paradigm of nutrition, physical and cognitive development, and disease prevention, with scant regard for the impact that natural ‘everyday’ practices of eating and caring can have on enhancing encultured commensality, care and learning.
