Student Perceptions Of The Shift From Soft Drink Vending Machines To Milk Vending Machines In Schools, Jillian B. Trapini

Master's Theses and Doctoral Dissertations

Soft drink vending machines are available in many schools across the nation. Some schools have recently removed soft drink vending machines and replaced them with milk vending machines. The purpose of this study was to investigate high school students’ (n = 84) perceptions of the shift from soft drink vending machines to milk vending machines in schools.

Students in this survey had an understanding of the importance of drinking milk, and students generally felt that purchasing milk from the lunch line was more convenient than from the vending machine. Students felt that the vending machine might contain warm, out of …

Feeding Drosophila A Biotin-Deficient Diet For Multiple Generations Increases Stress Resistance And Lifespan And Alters Gene Expression And Histone Biotinylation Patterns, Erin M. Smith, Jia Tse Hoi, Joel C. Eissenberg, James D. Shoemaker, Wendi S. Neckameyer, Anne M. Ilvarsonn, Lawrence G. Harshman, Vicki L. Schlegel, Janos Zempleni

Department of Nutrition and Health Sciences: Faculty Publications

Caloric restriction increases stress resistance and lifespan in Drosophila melanogaster and other species. The roles of individual nutrients in stress resistance and longevity are largely unknown. The vitamin biotin is a potential candidate for mediating these effects, given its known roles in stress signaling and gene regulation by epigenetic mechanisms, i.e., biotinylation of histones. Here, we tested the hypothesis that prolonged culture of Drosophila on biotin-deficient medium increases stress resistance and lifespan. Flies were fed a biotin-deficient diet for multiple generations; controls were fed a biotin-normal diet. In some experiments, a third group of flies was fed a biotin-deficient diet …

Advances In Startercultures And Cultured Foods, T. M. Cogan, J. Steele, Jeff Broadbent, N. P. Shah, Z. Ustunol

Nutrition, Dietetics, and Food Sciences Faculty Publications

With 2005 retail sales close to $4.8 million, cultured dairy products are driving the growth of dairy foods consumption. Starter cultures are of great industrial significance in that they play a vital role in the manufacturing, flavor, and texture development of fermented dairy foods. Furthermore, additional interest in starter bacteria has been generated because of the data accumulating on the potential health benefits of these organisms. Today, starter cultures for fermented foods are developed mainly by design rather than by the traditional screening methods and trial and error. Advances in genetics and molecular biology have provided opportunities for genomic studies …

Rapeseed (Brassica napus) is a bright yellow flowering member of the family Brassicaceae (mustard or cabbage family). Industrial rapeseed is high in erucic acid or H.E.A.R, with greater than 45 per cent erucic acid, which is mildly toxic to animals especially poultry. Erucic acid at levels beyond 0.605 per cent in diet is known to cause growth depression, reduction in feed intake and efficiency in growing chicks. Natural rapeseed meal also contains glucosinolates (the 'hot' in mustard seeds, when this compound is broken down with water it reacts and provides the heat felt on the tongue, characteristic in all Brassicaceae …

Theses and Dissertations in Business Administration

As the number of Americans diagnosed with heart disease, diabetes, and excessive weight continues to increase, providing information to allow consumers to choose healthier foods becomes imperative. The number of consumers eating food away from home (EFAH) is rising. Although nutrition information is required on food products purchased for home use, it is not required when EFAH. How can a consumer know what is healthy if nutrition information is not provided? Policy makers and restaurateurs are in conflict regarding the provision of nutrition information on the menu. Policy makers want this information to be provided while restaurateurs say providing this …

Aromatic Compounds In Three Varieties Of Turnip Greens Harvested At Three Maturity Levels, Georgia Jones, Ola Goode Sanders, Casey Grimm Jan 2007

Aromatic Compounds In Three Varieties Of Turnip Greens Harvested At Three Maturity Levels, Georgia Jones, Ola Goode Sanders, Casey Grimm

Department of Nutrition and Health Sciences: Faculty Publications

Turnip greens (Brassica rapa) are commonly consumed in the southern U.S.A. Typically, they have a bitter taste, which increases with maturity, probably because of increased levels of glucosinolates. While glucosinolate degradation products have been isolated from various members of the Brassica family, the effect of variety and maturity on these products has not been determined. This study focused on the glucosinolate degradation products of three varieties of turnip greens: Purple Top, Seven Top and Tokyo Cross, harvested 45, 60 and 75 days after planting. Four volatile components (benzene acetonitrile, benzene propane nitrile, 1H-indole-3-acetonitrile and benzene ethyl isothiocyanate) were isolated, identified …
