Targeting gut microbiota with diet, prebiotics, and probiotics are emerging as a promising intervention in the comprehensive nutritional approach to reducing obesity and metabolic disorders. Recent human and animal studies suggest that such intervention can promote health benefits by influencing the aspects of metabolism and immunity. However, study of the multi-role association between the diet, the host and the microbiota remains to be clarified. Purpose: To determine if personality style is related to perceptions of health coaching and if there is a relationship between perceptions of health coaching and the ability to lose weight. Methods: Data was gathered from approximately 2,000 MR program participants via an electronic survey. The Client Evaluation of Motivational Interviewing scale was used to determine if perceptions of health coaching affect the ability to lose weight. Objective: To quantitatively assess perceived coaching confidence of a community coach working with food councils, and to qualitatively determine perceived barriers and facilitators associated with coaching rural food councils.
Design: Two phases were implemented using a mixed methods study design with quantitative (scorecard) and qualitative (key informant interviews) methodologies.

The first objective of this research was to enhance nutritional, rheological, sensory profiles, and shelf life of wheat-based pita bread using chickpea (CP) and food grade distiller’s dried grains (FDDG) as fortification ingredients. CP and FDDG are both high-protein and high-fiber ingredients. Nutritional efficacy was evaluated. Dough rheology and product texture were also analyzed. Chemical, physical, and rheological properties of blends, doughs and finished products were evaluated and the results showed an increase in protein, fat, ash, and total dietary fiber with an increase of FDDG and CP in the wheat-based food formulation. The purpose of this study was to test the hypothesis that muscular fitness is preserved in older adults who consumed pork daily as a part of the DASH dietary pattern. A controlled feeding pilot study was used to test this. Eight healthy older men and women were randomly assigned to consume either 3 ounces or 6 ounces of pork daily as a part of the DASH diet for a total of 12 weeks. To determine the effects of a diet that provides 30% energy from protein with ½ as lean, red meat on risk factors of metabolic syndrome in humans. This pilot study was a 3- month, randomized, control, intervention trial with 33 participants (Beef-Intervention n=18; DASH-Control n=15) who displayed markers of metabolic syndrome. The purpose of this paper was to systematically review the current literature and evaluate the overall efficacy of nitrate supplementation on exercise tolerance and performance by meta-analysis. Studies were eligible for inclusion if they met the following criteria: 1) were an experimental trial published in an English peer-reviewed journal; 2) compared the effects of inorganic nitrate consumption with a non-bioactive supplement control or placebo; 3) used a quantifiable measure of exercise performance; and 4) was carried out in apparently healthy participants without disease. To assess accelerometer-derived physical activity and sedentary time from 0 to 24- months in youth in the iCook 4-H program. The iCook 4-H Program was a 5-state, randomized, control-treatment, family-based childhood obesity prevention intervention promoting cooking, eating and playing together. Youth, 9-10 years old, and their main adult meal preparer, participated in the 12-week program followed by monthly newsletters and bi-yearly booster sessions until 24-months. To examine the relationship between baseline, post, and follow-up accelerometer derived physical activity (PA) in 9-10 year old children participating in iCook 4-H, a 16-week, 5- state, randomized control family centered childhood obesity prevention program. This family focus intervention was designed to promote PA through lifestyle modifications. Between group differences in minutes-per-day and intensity of PA were determined on accelerometer compliant participants. The purpose of this study is to determine the availability of “more” versus “less healthful” entrée items in the campus dining environment and also to determine if students’ purchases are reflective of what is offered.
Entrée items were categorized as either “more” or “less healthful” according to the American Heart Association guidelines. Students’ entrée purchases from the 2014- 2015 school year were analyzed at a Midwestern university. The relationship between students’ demographics and food purchases was also analyzed in this observational study. Purpose: Meal replacement programs (MRPs) facilitate weight loss. Unfortunately, a large percentage of individuals that lose weight through MRP are not successful at maintaining their weight. Weight regain one year following weight loss via meal replacements has been as high as 40-50%, demonstrating a critical need to improve weight maintenance in MRP participants.
