The proximate composition, pH, free amino acids, ammonia and nucleotide-related compounds of raw abalone, commercial processed abalone and abalone analogues were investigated. Taurine was the dominant free amino acid (FAA), accounting for 61.4% of the total FAA in raw hybrid abalone and 29.9% in processed abalone. Abalone analogue products had a high amount of free amino acids, but only 0.3-2.5% taurine. The proximate composition and pH value of abalone changed only slightly after blanching and processing, while the taurine and glycogen content decreased by 50%. The ability of animals to cope with environmental stress depends – in part – on past experience, yet knowledge of the factors influencing an individual's physiology in nature remains underdeveloped. We used an individual monitoring system to record body temperature and valve gaping behavior of rocky intertidal zone mussels (Mytilus californianus). Thirty individuals were selected from two mussel beds (wave-exposed and wave-protected) that differ in thermal regime. Instrumented mussels were deployed at two intertidal heights (near the lower and upper edges of the mussel zone) and in a continuously submerged tidepool. A technique is described in which irrigation of the mantle cavity of oysters, Crassostrea gigas, induces pumping at steady rates. Simultaneous net influx of 10 amino acids (asp, glu, asn, ser, gly, tau, ala, val, phe, lys) is observed by high-performance liquid chromatography (HPLC). Individual amino acids exhibit first-order exponential depletion from an initial medium concentration of 2.0 μM. Influx of radiolabeled alanine corresponds very closely to net entry of alanine as estimated by HPLC. Therefore, net entry of alanine from dilute solution (5 μM) occurs.
