Introduction Racial/ethnic minority communities are at increasingly high risk for chronic diseases related to obesity. Access to stores that sell affordable, nutritious food is a prerequisite for adopting a healthful diet. The objective of this study was to evaluate food access, availability, and affordability in 3 nonoverlapping but similar low-income communities in urban Los Angeles, California. Methods Using a community-based participatory research approach, we trained community members to conduct a food assessment to 1) map the number and type of retail food outlets in a defined area and 2) survey a sample of stores to determine whether they sold selected …

The passage of No Child Left Behind has increased the level of accountability for all educators. There are many factors that affect student achievement. One factor that may be overlooked is the schedule configuration of schools. Addressing student needs through scheduling options may assist school systems and students in performing at the level they are being held accountable.
The population for this study was students from a rural East Tennessee middle school with a population of approximately 700 students. The low socioeconomic students represent 68% of the school total enrollment while 18% of the students have an individual education plan …

The essential oil and methanol extracts of Matricaria Chamomilla L. were subjected to screening for their possible antioxidant activity by two complementary test systems, namely 2,2-diphenykpicrylhydrazyl (DPPH) free radical scavenging and β-carotene-linoleic acid assays. BHT was used as positive control in both test systems. In the DPPH test system, the IC50 values of essential oil and methanol extracts were 4.18 and 1.83 μg/ml, respectively. In the β-carotene-linoleic acid system, oxidation was effectively inhibited by M. Chamomilla, the RAA value of essential oil and methanol extracts were 12.69 and 11.37 %, respectively. In the aftermath of a major natural disaster, few are equipped to respond effectively to the unique emotional and psychological needs to children. Child life specialists are specifically trained to help children effectively cope with traumatic situations, though very few child life specialists have engaged in disaster-related work. There exists the need for a medium through which child life specialists can become involved and offer their crucial and unique services. This project offers a rationale for why this medium is necessary and proposes a model for the integration of child life into the pre-existing Red Cross disaster relief model.

Designing A School Garden Space That Emphasizes Children's Wants And Uses Permaculture Design Methods, Mikhaela Mullins
Department of Environmental Studies: Undergraduate Student Theses
A case study was organized at Saratoga Elementary school in Lincoln, Nebraska to obtain data on what children desire in a garden space. To collect this data a school garden space was constructed and an after school garden club was implemented. Students who participated in the after school garden club partook in the study by drawing their ideal garden. Elements that the subjects drew were identified and categorized into ‘highly desired’ and ‘somewhat desired’.
These elements were then incorporated into a proposed garden design plan for Saratoga. The proposal plan uses Permaculture design methods to emphasize sustainability.

With the prevalence of online learning in education for both distance and campus-based students, it is critical to determine how to design electronic learning materials that tailor to student motivation and facilitate learning. Students were asked to complete an online plant breeding activity, motivation survey and an online learning quiz related to the activity. The control group of students was those who elected not to complete the activity, while the experimental group of students chose to complete the activity. Motivation scores were compared between control and experiment groups, courses, and gender using independent sample t-tests. Pearson correlations were also used …

With the increasing complexity and expansion of the biological sciences, there has been a corresponding increase in content in the first-year introductory biology course sequence for majors. In general this has resulted in courses that introduce students to large amounts of material and leave little time for practicing investigative science or skill development. Based on our analysis of data compiled from 742 biology faculty at a variety of institutions across the United States, we verified that there is strong agreement on the content appropriate for introductory biology courses for majors. Best practices for assessing developmental skills in young children focus on naturalistic observation in everyday settings, but the effects of environment on test scores, eligibility status and administration time have not been explored. The Peabody Developmental Motor Scales-Second Edition (PDMS-2) was administered to 34 children aged 18 to 59 months in natural and pull-out settings. PDMS-2 total, gross, and fine motor quotient (TMQ, GMQ, and FMQ) scores were significantly lower in the natural environment (p’s≤.014). Based on our results, more children would qualify for services when tested in natural environments using TMQ and GMQ scores. It also took significantly longer …

Joan Williams has many years of experience in school nutrition and education. She holds a Bachelor’s degree in education from Georgia Southern College, a Master’s in education from Georgia College, and an Education Specialist degree from the University of Georgia. After teaching home economics for seven years, Joan served for 27 years as the school nutrition director for Carroll County Schools, a 15,000-student district in Georgia. Joan helped build an effective team that received many awards for increased participation and innovation. Linda Erwin, an Arkansas native, began her career as an elementary and then a home economics teacher. She later moved to Tennessee and taught adult vocational home economics classes. She eventually went to work for Shirley Watkins, the school nutrition director for Memphis City Schools, who introduced her to child nutrition. Erwin eventually moved to Georgia where she continued her career, becoming a food service director, and became very active in the Georgia School Food Service Association. She retired after twenty-eight years in the Georgia child nutrition programs.

After college Judy Hendrix taught home economics, science, and geography at different times before getting into the child nutrition field. Hendrix then worked as a school nutrition director for one year before becoming an area consultant for school nutrition with the Georgia Department of Education. After working as an area consultant in various Georgia locations for a number of years, Hendrix returned as a food service director for a large school district, where she worked for a further four years before retirement.

During Scholar Week we take inspiration from 18th century preacher-scholar |ohn Wesley. As “a denominational university in the Wesleyan tradition,” scholarship and piety are thoroughly compatible here. So, in Scholar Week we tune our ear to the gong and echo of Wesley. It is not just history, but his story, even to this day. In our own scholarship projects we join a great cloud of Christians not educated out of their faith, but fashioning an educated faith, where the love of the Lord by heart, soul, strength, and mind is our great and worthy cause.
