Because of the method of operation and the use of gasoline as fuel, safety from fire and carbon monoxide has been frequently questioned. Five commercial electric stoves having major variations in types of surface units, in the construction, lining, and insulation of the oven, and in the retail price were studied to determine (1) the efficiency and time of heating of the various surface units, and (2) the merits of differently constructed ovens.
