Young Adults’ Essential Food Skills And Cooking Perceptions: A Mixed Method Study, Marcy Gaston, J. Mitchell Vaterlaus, Nicole Wanago

Our purpose in this research study was to examine perceptions of food and nutrition educators (FNEs, i.e., Registered Dietitians Nutritionists and Family and Consumer Science teachers) and young adults (ages 18–25) on the status of cooking and food skills among young adults. Using a cross-sectional survey design, FNEs (n = 93) and college-attending young adults (n = 270) in the United States completed electronic surveys. The qualitative and quantitative data were collected and analyzed using a convergent mixed-methods approach. Financial literacy has been an issue for decades in the United States; however, the COVID-19 pandemic put financial illiteracy in the spotlight. Education regulations in many U. S. schools require teachers, including career and technical education (CTE) teachers, to integrate literacy skills into the curriculum to support student performance on standardized tests. Changes in teaching strategies and content for literacy integration require administrators to improve the support systems for CTE teachers. The purpose of this basic qualitative study was to explore CTE teachers' experiences in integrating literacy into the curriculum and the support they receive from administrators. Using consumer socialization theory as theoretical framework, the purpose of this quantitative, nonexperimental, cross-sectional study was to identify the information sources that Puerto Ricans college students use to gather financial knowledge. A sample of 198 Puerto Rican college students answered a portion of the College Student Financial Literacy Survey. The research question addressed the preference of four financial information sources, including parents, peers, media, and school. A combination of descriptive statistics, one-way analysis of variance, repeated-measures analysis of variance, and multiple linear regression confirmed that participants preferred to gather financial knowledge from parents. In the United States, turnover threatens the economic status of the restaurant industry. In 2016, the turnover rate for the fast-casual restaurant dining industry was 1.8 million people with approximately 3 million people working in the industry. Restaurant leaders struggle with solutions to help reduce the problems of turnover.
