Hot Cross Buns 2020: Recipe, James A. Griffin

The hot cross bun is a traditional enriched, soft, spiced bun which is mainly eaten during lent. Good Friday being the big traditional day to buy these buns due to the religious significance of the catholic Easter celebrations. This particular recipe was used in the Coupe du Monde 2019 finals in Paris as part of the international challenge for competing candidates.

Raspberry Scones are a delicious treat, best eaten warm with raspberry Jam, butter or clotted cream. The recipe is over 140 years old and was used by my great grandfather in the 1870's in Galway. Simple to make, this is one of the most popular recipes when I teach globally.

The Department of Children and Youth Affairs commissioned research through the Irish Research Council (IRC) to examine concepts of school readiness as they are understood by early years educators and managers, primary school principals, junior infant teachers and parents of children participating in the first Free Preschool Year in Ireland. A mixed-methods approach was adopted, involving interviews, an online survey and “draw and tell” sessions with children. This paper considers the potential merits of emotional competency coaching for undergraduate students. We outline the findings from our previous work which showed, for example, that a sample of First Year undergraduate students failed to engage with coaching primarily because it was not a mandatory aspect of the curricula. An analysis of the National Framework of Qualifications (NFQ) - which details the specific learning outcomes that must be achieved by all Irish academic syllabi found that this framework makes scant reference to the development of social and emotional skills.
