Although the skill of speaking is necessary for attaining basic interpersonal communicative skills (BICS), most traditional second language acquisition programs base their pedagogy and curriculums on lexis and grammar of the written form and phonology/phonetics. The purpose of this project is to demonstrate how to effectively adapt content-specific material for developing the speaking skill at community colleges with adult students who are interested in pursuing a career in the wine industry as a sommelier. Mathematics is considered a universal language for students. However, now common core standards require students to explain their conceptual understanding through words, numbers, and verbal explanations. Student proficiency in the universal language is impeded when they do not speak the primary language. It is difficult for the teacher to teach both the academic language and mathematical concepts, when the vocabulary is not accessible to all students. K-12 students whose first language is not English are identified upon enrollment in U.S. schools through a home language survey and are immediately assessed to determine whether English as a second language (ESL) services are required. Students who do not pass this initial screening assessment are classified as English Language Learners (ELLs), or as limited English proficiency (LEP) students, and are identified to receive school-provided English language development (ELD) and accommodations. Students who pass the initial screener or who demonstrate English proficiency two years in a row on state-mandated annual assessments are deemed fluent or fully English proficient (FEP) students …
