Background: Food insecurity is lack of access to proper nutrition for an individual to obtain a healthy lifestyle. The goal of this research is to determine the frequency of food insecurity among college students at a four-year college institution during COVID-19 pandemic in association to mental and physical health status.
Methods: This study was conducted among college students using cross-sectional study method. All data were collection virtually and kept anonymous. All statistical analyses were conducted using SPSS version 28 with (p<.05), denoting significance.

This dissertation seeks to provide a framework for engaging with two spatial concepts that have been foundational to theorizing literacy across time but have often been taken for granted as passive backdrops to the social action of literacy practice: the notions of “the local” and “the global.” By interrogating the histories, both past and ongoing, of these two spatial concepts as they are interwoven into the sociocultural paradigm of literacy theory, research, and pedagogy, this project identifies new ways that literacy researchers and educators can attend to spatial concepts so as to promote and encourage literacy research and learning that …

Students have been negatively impacted socially, academically and personally through the inability to provide enough nutritious meals to fuel their bodies. The higher education public system should be seen as a collaborative effort to educate institution employees on the issue of food insecurity as the first step in combating food insecurity among their local community. Refugees resettled in the United States are expected to quickly become self-sufficient members of society despite the numerous challenges they face due to adaptation and integration into new systems and ways of life. Issues with dietary and nutritional adaptation persist for resettled refugee communities in the United States and are not prioritized by national, state, or local policy and practice. This research aimed to help mitigate problems with food assistance benefits and healthy eating issues faced by resettled refugees in Hillsborough County through an applied intervention in local English as a Second Language (ESOL) classes. In 2008, Proposition 2 passed, forcing all egg producers in California to provide more room inside of cages to their laying hens. The Humane Society of the United States [HSUS] initiated this battle and won but, less than a decade later decided that still wasn’t enough room for the birds. HSUS is now pushing to have a new measure on the ballot in November 2018 forcing all egg producers in California to produce their eggs cage free.

Abstract
Incarceration and substance abuse are two of the largest public health issues in America. While the U.S. makes up only 5% of the world’s population, it accounts for 25% of its prisoners. Incarceration affects more than 2.2 million individuals who will eventually return to their families and communities with ongoing family, social and health issues. Women in prison are a particularly vulnerable and underserved population, generally of low education and socio-economic status and although they account for a small percent of the prison population, many are mothers of young children who are likely to become incarcerated themselves. Cooking skills are important but declining, with significant health, social, cultural, political, economic, and environmental implications. Food and cooking education can begin to address some of the negative effects of the cooking skills decline. This thesis makes the case for cooking classes in the education system, especially in higher education. The paper begins with a history of cooking education and skills, outlines the implications of the decline in skills, and discusses the potential for cooking education in higher education. Food neophobia, the fear of new foods, has been identified as a significant barrier to the intake of healthy foods, including fruits and vegetables in young children. Food neophobia can hinder dietary quality as well as dietary variety by limiting the development of food preferences. It has also been suggested that neophobia is linked to the development of childhood obesity, and due to the escalating epidemic of childhood obesity that is known to be associated with serious health complications, interventions that target food neophobia in preschool aged children may be successful in improving healthy eating habits and potentially reversing the …

Don't Yuck My Yum is an alphabet book that moves the reader through the experience children have when they are gathered in a restaurant for a party where each child orders a food that is somehow ruined. The phrase, "Don't Yuck My Yum", used as a refrain, is the children's angry response to receiving the disappointing plate, meaning, "don't ruin my delicious food." Because it is an alphabet book, there are 26 children, one for each letter, and a child's name that begins with each letter and a corresponding food. This thesis presents a social studies curriculum for third and fourth grade students on the domestic life of New Amsterdam. Beginning with the geography of the region, the study focuses on the role that the environment has on meeting basic human needs of shelter, food and clothing. Based on a framework of objectives and ideas, the study is divided into three major units: shelter, food and clothing.
