Refugees resettled in the United States are expected to quickly become self-sufficient members of society despite the numerous challenges they face due to adaptation and integration into new systems and ways of life. Issues with dietary and nutritional adaptation persist for resettled refugee communities in the United States and are not prioritized by national, state, or local policy and practice. This research aimed to help mitigate problems with food assistance benefits and healthy eating issues faced by resettled refugees in Hillsborough County through an applied intervention in local English as a Second Language (ESOL) classes. Picky eating is often seen as a temporary phase that children go through in the developmental process. While some children never exhibit picky eating behaviors, others seem to get stuck in the tendency of judging foods, which they have never tried, based upon a pretense that the food might not meet with their satisfaction. Learning more about children’s preferred food groups and types of foods, along with the family environmental factors experienced by these children may help to understand ways to support children who struggle with picky eating. Cooking skills are important but declining, with significant health, social, cultural, political, economic, and environmental implications. Food and cooking education can begin to address some of the negative effects of the cooking skills decline. This thesis makes the case for cooking classes in the education system, especially in higher education. The paper begins with a history of cooking education and skills, outlines the implications of the decline in skills, and discusses the potential for cooking education in higher education. A working definition of a concept known as ‘food literacy’ encompasses using basic food preparation knowledge that has been learned, understood, and practiced to make better food decisions. To advance these skills for client service, a post-secondary nutrition program would need to include objectives that allow application of knowledge. For this reason, the purpose of this study was to determine the difference in knowledge and application among students in 100, 200 and 400 level college nutrition course(s).
