This project was initially created for use at Fort Hope in Arroyo Grande, California. It designs lesson plans created to teach children about the beef cattle industry. The project consists of lesson plans for three age groups: 7-9, 10-12, and 13-15. Each age group will learn various aspects about beef cattle, and lessons will increase in complexity as the children advance age groups. The groups will spend six days in lecture completing worksheets and activities, and on the seventh day, after completion of a review game, the children receive certificates. Grazing cattle on winter wheat, often prior to grain harvest, is common throughout the southern Great Plains. Grazing generates about $50 million in income for Texas wheat producers and reduces the risk of growing wheat by providing a substantial income source other than grain. Benefits can be realized by grazing prior to the primary environmental risk period for drought, heat stress, and hail, all of which frequently reduce grain yield while having limited impact on forage production. Cattle also are grazed on winter wheat fields in western Nebraska and the surrounding region. Typically in Nebraska, fall forage would be used …

Utah State University is engaged in studies to determine management practices that can be employed under intensive irrigated pasture to increase productivity and viability of beef and dairy producers in Utah. The type and amount of concentrate included in beef cattle diets can greatly influence production and profitability. Small grains are typically fed in these rations, but the inclusion of by-product feeds, such as wheat middlings (WM), in growing and finishing diets have recently been studied (Dalke et al., 1997; Blasi et al., 1998).

Injection of almost any drug or solution into the muscles of a food animal will result in scar tissue formation and some residual lesion in those muscle tissues. These lesions are very displeasing to consumers if found in meat products. Their presence also contributes to loss of tenderness for much of the remainder of the cut of meat. If found during processing, the lesions can be trimmed out but this still results in trim loss and increased labor costs for the processor.

In July 1996, the U.S.D.A. published the Final Rule on Pathogen Reduction for meat and poultry processing facilities. Its goal is to reduce the occurrence of food-borne pathogens in meat and poultry products. The rule requires carcass sampling for "generic" E. coli in meat and poultry slaughter operations. A high SCC is an indication of chronic, subclinical mastitis in the herd and is also an indication of significant economic losses.
