Journal of Community Engagement and Higher Education
In this preliminary study, the Global Engagement Survey (GES) was used to assess developmental outcomes in undergraduate students enrolled in a multi-year community-based global learning program. Statistically significant growth was observed on the Civic Efficacy (CE) scale of the GES (p = 0.01). The GES appears to have significant utility in the quantitative assessment of undergraduate community-based global learning programs, even when small sample sizes and pretest ceiling effects exist.

Impact Of Service Learning On Personal, Social, And Academic Development Of Community Nutrition Students, Kritika Gupta, Blake Grove, Georgianna Mann
Journal of Community Engagement and Higher Education
Service learning connects theoretical knowledge to community settings. Reflective journals were used to document student service-learning experiences in a Community Nutrition course component. Reflective journal data obtained from students (n=137) during different semesters were analyzed qualitatively. The service-learning partners included Nutrition Education, Food Provision, and Local Food sites. Positive impacts were noted on personal, social, and academic development of students for all sites. Service-learning assignments can impart transferrable skills and enhance student development.

Limited research exists on the role service learning can play in helping students understand loss and grief. Through semi-structured interviews with students and instructors, online surveys, and course feedback, this qualitative case study examined the experiences of 15 university students in an outreach course working with grieving K-12 students. Students self-reported gaining greater intra- and interpersonal understanding and grief processing self-efficacy. Instructors emphasized intentionality and the intertwined nature of course experiences influencing meaning making.

Service-learning helps students learn about course concepts through applying them in a setting outside the classroom. The experiences provided by service-learning create conditions that can lead to changes in the learner’s brain. In this paper, we provide support for this assertion from research in brain-based learning with suggestions of how to explicitly apply concepts from these areas of study to service-learning pedagogy so that we might increase learning.

Research indicates that counselor education requires experiential instruction to properly facilitate student engagement (Merlin-Knoblich et al., 2020) Specifically, flipped format classes tend to encourage more student engagement than traditional lecture and online asynchronous courses (Merlin-Knoblich et al., 2020). Such activities should be both varied in nature and include proper exposition and context (Young, 2022). Online programs continue to grow in popularity (Snow et al., 2018). Diabetes camp is helpful in providing hands-on learning experiences and interprofessional learning opportunities through immersive experiences. Currently, there is little research comparing the changes in knowledge and perception during experiential learning in dietetics students at a residential diabetes camp. This longitudinal qualitative case study explored the knowledge, perceptions, confidence, and empathy gained by four dietetics students during experiential learning at the camp. Qualitative research methods (interviews, observations, "photovoice," journals, and focus groups) were used to explore and understand participants’ experiences of hands-on involvement with type one diabetes, and what they learned at camp that cannot be learned in a classroom. …

Objective: Knowledge and competence in sustainable food systems is a priority in dietetic programs and outlined in program accreditation standards and standards of practice for Registered Dietitian Nutritionists (RDNs). However, limited literature exists on how students are learning about sustainable food systems. The purpose of this study was to explore dietetic student experiences and perceptions after the inclusion of a farm-based experiential-learning activity. Methods: A qualitative approach was utilized to explore student reflections following their experiential-learning with sustainable food systems via university-based farms. Family and Consumer Sciences (FCS) and Extension professionals need to understand the lived experience of poverty because it affects every aspect of an individual’s life. Poverty is related to inadequate nutrition and food insecurity, lack of access to health care, insufficient child care, unsafe neighborhoods, lack of affordable housing, under-resourced schools, and a lower quality of life. Attitudes toward poverty vary widely among Americans and can be categorized as either internal/individual attributions (e.g., laziness, welfare dependency, etc.) or systemic/structural attributions (e.g., unemployment, inflation, etc.). Individuals holding internal attributions toward poverty are more likely to have negative feelings toward impoverished individuals. …

Cooperative Extension strives to provide agricultural producers with non-formal educational opportunities designed to positively impact agriculture (NIFA, 2021). Therefore, a team of Extension professionals at the University of Nebraska – Lincoln developed and facilitate an ongoing professional development program designed to enhance the engagement of agricultural producers in farm management, especially in the areas of input use efficiency and profitability. The author investigates this question in the context of undergraduate education, recounting several educational experiments that highlight subtle but powerful aspects of the student learning experience. AgriCorps, an American organization, created a fellowship program to connect agricultural professionals to school-based agricultural education in developing countries. Previous scholars researched the impacts of international experiences on learners, usually through the lens of short-term study abroad. This study seeks to examine the impact of long-term international fellowship experiences in education and provide recommendations for future like-programs by analyzing the experiences of previous AgriCorps fellows. Fellows lived and taught school-based agricultural education in a community in Ghana or Liberia. Drawing upon my own experience as an educator, I describe and reflect upon my experiential learning-pedagogical process of transforming my fall 2020 Zoom-based honors interpersonal communication course in which my students traversed through a series of experiential learning activities called Interpersonal Enrichment Journeys. Quantitative and written data revealed that students achieved desired learning outcomes and strengthened much-needed interpersonal connections despite the circumstances and stressors induced by the pandemic. While the need for school counselors to support ELs is prominent, school counselors believed they were not well prepared to effectively work with EL students. To inform and strengthen our practice, we engaged in a practitioner inquiry study to understand the lived experiences of school counselors-in-training (SCITs) in an experiential learning activity to work with English Learners. This paper presents and analyzes a case study of a five-week study abroad course called Inequality in Brazil: An exploration of race, class, gender, sexuality, and geography. The course was constructed to teach social inequality in the context of Brazil by using place-based and experiential learning within the framework of critical pedagogy (Freire, 1989). By examining inequality through the lens of culture and geography, students were empowered to become student-teachers in their explorations of race, class, gender, and sexuality as they linked theory to practice and lived experience. In 2017, the Trump administration announced plans to reduce the size of the Bear's Ears National Monument (BENM) in Utah, greatly reducing the monument designated by the Obama administration and reducing protections on land viewed as sacred by multiple indigenous communities in the United States (Creadon & Bergren, 2019). Experiential learning can be in the form of internships, field trips, service learning, and research projects. The practical nature of criminal justice is a logical fit for experience-based learning. Specifically, academic field trips may be viewed as examples of short-term experiential education. However, do experiential learning trips have an academic impact over time? Using survey data, the current study examines if students acquire and retain knowledge after a prison tour of Eastern State Penitentiary. This study focuses on the perceptions of post-secondary interpreting students who traveled to concentration camps, Auschwitz-Birkenau (Poland) and Schloss Hartheim (Austria). The historical context of spoken language interpreters in concentration camps, eugenics in the Deaf community, and extermination of people with disabilities underpin the study’s mixed-methods design, incorporating social identity and transformative learning theories to explore professional identity development. A Deaf, Jewish moderator-participant facilitated four focus groups using photo elicitation to foster narratives. This article highlights the community partnership between a primary school Dual Language program and university Spanish students. In this submission related to personal experience during the COVID-19 pandemic, the impact of classroom teachers within the BRILLA (Bilingual Readiness through Interaction, Language, Literacy and Alliances) program is explored. Drawing on challenges I experienced when teaching a political communication course, I designed an upper-level undergraduate course with the objective of developing students’ civic competence and democratic engagement. The major class assignment, which is the focal point of this best practices essay, was a four-step collaborative voter mobilization project designed and executed by undergraduate students. Although college enrollment rates among Black and Latinx students have risen, inequities in graduation rates across racial and ethnic groups persist. Guided by the integration of strength-based frameworks, the proposed manuscript will discuss how experiential learning and teaching may serve a dual purpose: helping students enact social change while simultaneously reaching their education goals. The proposed manuscript will integrate the culturally engaging campus environments model with the transformative social-emotional learning (T-SEL) framework. Campus communities continue to become increasingly diverse as the U.S. grows more sensitized to, yet polarized over, issues of social justice. In response, many institutions of higher learning are placing greater emphasis on students’ experiential learning about diversity, equity, and inclusion (DEI) in co-curricular experiences such as new student orientation and in coursework. Experiential educators can help students forge links between learning about DEI in the co-curriculum and curriculum, and to move from intergroup dialogue to deliberation, which allows student learning to inform institutional learning. This practice-based approach argues service learning can teach social justice in parks & recreation management education. The US parks system creation and history is rooted in injustice. Use of US parks and park service employment remain inequitable today. Significant work must be done in the provision of recreation and park services to all members of the community, including those who have been traditionally marginalized or underserved. As counselors routinely provide both individual and group-based services, it is important to prepare trainees to effectively utilize both approaches. One popular method for engaging students in group work training requires them to participate in experiential small groups. Although this requirement meets CACREP’s (2015) standard that students engage in 10 hours of group membership, less specific focus is placed on engaging students in active group facilitation training. This study analyzes qualitative interviews with seven counseling graduates who participated in experiential small groups during their training. Students experience a reenactment of life on the frontier created by the interaction of their teachers and community volunteers. Students in elementary social studies learn content, skills, values, and dispositions through engaging in experiential learning. The classroom environment is described through a case study of one classroom of fourth grade students with an experienced teacher with deep roots in the community. Teachers develop skills in negotiation with volunteers to accomplish tasks that support student learning. Criminal justice programs are often considered a training ground for students’ future careers; however, that training often lacks a focus on civic engagement. This article highlights an experiential learning project in an introductory criminal justice course that was designed to develop the skills of civically engaged professionals. The project, combining research with service-learning, was implemented in an undergraduate criminology course to demonstrate the ways in which research and theory are necessary for implementing social and political change. The purpose of this investigation was to determine whether an experiential learning opportunity, specifically a study tour experience, would improve the cultural intelligence of prospective educational leaders and would challenge them to expand their own cultural understanding and behavior. Several prospective leaders who enrolled in a graduate program in Educational Leadership volunteered to attend a study abroad program that was intended, in part, to enhance their cultural competence. For six years, Greg Spaulding, assistant professor of mechanical engineering, has assigned a unique challenge to teams of Intro to Mechanical Engineering students: They must design and build a working vehicle that one person can drive and ride. In addition, it must be powered solely by a cordless drill. A lot has to happen between the day the students receive their assignment and the end of the semester when they present their final project in an Olympic-style competition.
