Objective: Knowledge and competence in sustainable food systems is a priority in dietetic programs and outlined in program accreditation standards and standards of practice for Registered Dietitian Nutritionists (RDNs). However, limited literature exists on how students are learning about sustainable food systems. The purpose of this study was to explore dietetic student experiences and perceptions after the inclusion of a farm-based experiential-learning activity. Methods: A qualitative approach was utilized to explore student reflections following their experiential-learning with sustainable food systems via university-based farms. Family and Consumer Sciences (FCS) and Extension professionals need to understand the lived experience of poverty because it affects every aspect of an individual’s life. Poverty is related to inadequate nutrition and food insecurity, lack of access to health care, insufficient child care, unsafe neighborhoods, lack of affordable housing, under-resourced schools, and a lower quality of life. Attitudes toward poverty vary widely among Americans and can be categorized as either internal/individual attributions (e.g., laziness, welfare dependency, etc.) or systemic/structural attributions (e.g., unemployment, inflation, etc.). AgriCorps, an American organization, created a fellowship program to connect agricultural professionals to school-based agricultural education in developing countries. Previous scholars researched the impacts of international experiences on learners, usually through the lens of short-term study abroad. This study seeks to examine the impact of long-term international fellowship experiences in education and provide recommendations for future like-programs by analyzing the experiences of previous AgriCorps fellows. Fellows lived and taught school-based agricultural education in a community in Ghana or Liberia. Drawing upon my own experience as an educator, I describe and reflect upon my experiential learning-pedagogical process of transforming my fall 2020 Zoom-based honors interpersonal communication course in which my students traversed through a series of experiential learning activities called Interpersonal Enrichment Journeys. Quantitative and written data revealed that students achieved desired learning outcomes and strengthened much-needed interpersonal connections despite the circumstances and stressors induced by the pandemic. The purpose of this phenomenological study was to describe foster parents’ trauma knowledge in Central Virginia. The theories guiding this study include childhood complex trauma theory and experiential learning theory (ELT). As discussed by Herman (1992) and Terr (1991), childhood complex trauma theory explains the behaviors and actions of foster children who have suffered complex trauma. As discussed by Kolb (2014), ELT explains the processes that foster parents go through in gaining and applying trauma knowledge to their fostering. Consulting for a startup company is an effective way for Master of Business Administration (MBA) students to learn about management consulting, and the ways and means of a startup company. This paper discusses the experience of an MBA startup project within the context of a core corporate finance course. The project requires the active engagement of several groups of stakeholders—MBA students, the university’s entrepreneurship incubator, a selection of startup companies, and the project’s academic collaborators. To inform and strengthen our practice, we engaged in a practitioner inquiry study to understand the lived experiences of school counselors-in-training (SCITs) in an experiential learning activity to work with English Learners. Specifically, academic field trips may be viewed as examples of short-term experiential education. However, do experiential learning trips have an academic impact over time? Using survey data, the current study examines if students acquire and retain knowledge after a prison tour of Eastern State Penitentiary. This research explores the role that place attachment and place meaning towards an urban farm play in predicting undergraduate students’ civic-mindedness, an important factor in sustainability and social change. In 2017 and 2018, three STEM courses at a private university in the Midwest incorporated a local urban farm as a physical and conceptual context for teaching course content and sustainability concepts. This study focuses on the perceptions of post-secondary interpreting students who traveled to concentration camps, Auschwitz-Birkenau (Poland) and Schloss Hartheim (Austria). The historical context of spoken language interpreters in concentration camps, eugenics in the Deaf community, and extermination of people with disabilities underpin the study’s mixed-methods design, incorporating social identity and transformative learning theories to explore professional identity development. A Deaf, Jewish moderator-participant facilitated four focus groups using photo elicitation to foster narratives. As counselors routinely provide both individual and group-based services, it is important to prepare trainees to effectively utilize both approaches. One popular method for engaging students in group work training requires them to participate in experiential small groups. Although this requirement meets CACREP’s (2015) standard that students engage in 10 hours of group membership, less specific focus is placed on engaging students in active group facilitation training.
