Using A Model To Design Activity-Based Educational Experiences To Improve Cultural Competency Among Graduate Students, Yeon Bai, Kathleen D. Bauer

To improve the cultural competency of 34 students participating in graduate nutrition counseling classes, the Campinha-Bacote Model of Cultural Competence in the Delivery of Health Care Services was used to design, implement, and evaluate counseling classes. Each assignment and activity addressed one or more of the five constructs of the model, i.e., knowledge, skill, desire, encounters, and awareness. A repeated measure ANOVA evaluated pre- and post-test cultural competence scores (Inventory for Assessing the Process of Cultural Competence among Healthcare Professionals). The overall cultural competence score significantly improved (p < 0.001) from “culturally aware” (68.7 at pre-test) to “culturally competent” (78.7 at post-test). Students significantly improved (p < 0.001) in four constructs of the model including awareness, knowledge, skill, and encounter. Factor analysis indicated that course activities accounted for 83.2% and course assignments accounted for 74.6% of the total variance of cultural competence. An activity-based counseling course encouraging self-evaluation and reflection and addressing Model constructs significantly improved the cultural competence of students. As class activities and assignments aligned well with the Campinha-Bacote Model constructs, the findings of this study can help guide health educators to design effective cultural competence training and education programs.

How To Be The Perfect Asian Wife!, Sophia Hill

“How to be the Perfect Asian Wife” critiques exploitative power systems that assault female bodies of color in intersectional ways. This work explores strategies of healing and resistance through inserting one’s own narrative of flourishing rather than surviving, while reflecting violent realities. Three large drawings mimic pervasive advertisement language and presentation reflecting the oppressive strategies used to contain women of color. Created with charcoal, watercolor, and ink, these 'advertisements' contrast with an interactive rice bag filled with comics of my everyday experiences. These documentations compel viewers to reflect on their own participation in systems of power.

The Healthy Living Ambassador Program brings health, teen leadership, and teamwork to California's elementary school gardens through interdisciplinary UC Cooperative Extension collaboration, community-based partnerships and teen teaching. During spring 2015, teen ambassadors trained by Extension educators and volunteers at UC Elkus Ranch in San Mateo County taught nutrition science, food cultivation and healthy living skills in an 8-week, garden-based, after-school nutrition and physical education program for elementary school children in an urban setting. Our goal with the present proposal is to bring modifications to the dining experience in Kimball Hall at the College of the Holy Cross, so to encourage a more well-rounded approach, which would best represent the values of continuous learning and education of the whole person and reflect the mission of the College. In order to meet these goals, we recommend five changes to Kimball dining , which we plan to implement during the Spring 2017 semester in collaboration with two Montserrat seminars.

Background: Academic success is a key determinant of future prospects for students. Cognitive functioning has been related to nutritional and physical factors. Here, we focus on iron status and aerobic fitness in young-adult female students given the high rate of iron deficiency and declines in fitness reported in this population. Objectives: We sought to explore the combined effects of iron status and fitness on academic success and to determine whether these associations are mediated by cognitive performance.

Childhood obesity is a significant problem in the United States. Obese children suffer from a variety of physical, emotional, and social consequences. To curb or reduce this problem, school-based nutrition education interventions have become more common. However, little research has been conducted concerning nutrition-related socioeconomic disparities in behavior change constructs for low and high income children, which is integral to forming appropriate theory-based interventions and allocating resources appropriately. Research into classroom teachers’ perspectives is also an area in need of strengthening to better inform interventions. Background: Heart rate is used as a health biomarker. This aim of this study was to investigate the effects of playing active video games on the heart rate of older adults, in comparison to the heart rate after common table recreational activity.
Methods: An experimental study with 40 participants was conducted: a control group (n=20) participated in common Pokeno® card games; an experimental group (n=20) played WiiTM bowling. The participants’ pre- and post-activity heart rates were measured and compared between and within groups using t-tests.

Schools possess a unique opportunity to reach a large captive audience and are becoming one of the battlegrounds for childhood obesity. To address the school environment’s role on the influence of American children’s nutritional intake and participation in physical activity, the United States (US) Federal Government adopted the Healthy, Hunger-Free Kids Act of 2010, placing an emphasis on implementation of the local school wellness policy (LSW). Peer teaching is a promising model of health education. Limited research exists on the topic of the effectiveness of peer health teaching, and even less research exists on the effects on the actual peer teachers, notably their motivations for becoming peer teachers as well as behavioral modifications and improved self-efficacy made as a result. This study examined the motivations and the health behavior modifications made by 4-H Eat 4-Health teen teachers ages 14 to 17 after delivering a peer health education program. The Adolescent Girls Empowerment Program (AGEP) in rural and urban Zambia aims to build social, health, and economic assets of adolescent girls. A safe spaces component is at the core of AGEP. Girls groups, under the guidance of a female mentor from the same community, provide a safe and supportive learning environment. The meetings are critical in building social assets for vulnerable girls—including friendships, self-esteem, trusting relationships with adults, and social support. In order to better assist practitioners and better serve persons with autism spectrum disorders (ASD) and their families, it is vital for professionals to systematically evaluate the existing body of literature and synthesize its scientific evidence, so that the efficacy of research can be translated to evidence-based practices (EBPs) (Wheeler, 2007; Zhang & Wheeler, 2011). This research synthesis evaluated adherence to EBP standards and analyzed the effectiveness of gluten-free and casein-free (GFCF) diets for individuals with ASD. The Mid-Day Meal Scheme (MDMS)—the world’s largest school lunch program—was launched by India’s central government in August 1995 with the lofty goals of “enhancing enrollment, retention, and attendance while simultaneously improving nutritional levels among children.”[1] 17 years later, particularly following prominent Supreme Court orders in November 2001 and April 2004, MDMS has become a key program for the government, now serving about 105 million primary and upper-primary schoolchildren in 1.2 million schools.[2] When implemented properly, MDMS has had a noticeable positive impact on student attendance and enrollment, alongside a reduction in teacher absenteeism. Background
The School Physical Activity and Nutrition (SPAN) questionnaire were developed as a surveillance instrument to measure physical activity, nutrition attitudes, and dietary and physical activity behaviors in children and adolescents. The SPAN questionnaire has 2 versions.
Objective
This study was conducted to evaluate the validity of food consumption items from the elementary school version of the SPAN questionnaire.
Design
Validity was assessed by comparing food items selected on the questionnaire with food items reported from a single 24-hour recall covering the same reference period.

Focused on improving the markets and economic stability of farmers, while also improving the quality of foods available to students, the project implemented the first annual “Massachusetts Harvest for Students Week” during the week of September 24, 2007. As part of Harvest Week, selected schools in Massachusetts purchased and served foods grown and made by local farmers.
