The role of a Registered Dietitian (RD) in long-term care facilities (LTCF) is to maintain the nutritional status of their patients by building appropriate diets, advocating for the patient with their doctors, ensuring proper caloric intake, and providing patient education on the relationship between a healthy diet and a healthy lifestyle (2022, RD Nutrition Consultants, LLC). Before a RD is able to help ensure proper nutrition for the patient they must the make sure the meal was safely prepared as well as obtained and will not cause any unintentional harm to the patient by causing a foodborne illness. Baking Without Gluten: Maximizing Nutrition Without Compromising Appeal, Callie Dunkerson

The purpose of the current study was to determine the appropriate adjustments needed to transform an ordinary muffin recipe into gluten-free (GF) muffins made with flaxseed meal (FM). Two batches of muffins were made, but all-purpose flour was replaced with FM, rice flour (RF), and xanthan gum in the experimental recipe. Participants conducted a sensory evaluation on both muffins. The GF muffin tasted similar to the control (C) but did not align with the C texture. This study illustrates the impact of GF flour components on baked goods and evidences the ability to create healthful and delicious alternatives for individuals …

National Youth Advocacy and Resilience Conference
This poster session highlights the ROCKETS program implemented in Sumter County Schools through UGA Extension. Through the ROCKETS Project in-school sessions, youth with disabilities are provided additional opportunities to belong to a larger group of youth through the Georgia 4-H Program. The ROCKETS Project focuses on Agricultural literacy and STEM education as content areas to cultivate, recruit and graduate the next generation of a highly-skilled diverse workforce.

This bilingual (Spanish/English) poster highlights six creative health literacy outreach projects that have proven to be successful in increasing participation in health-related events in their communities and in boosting health literacy in the process.
For example, in Georgetown, South Carolina, a beauty salon owner, concerned about her clients’ frequent frustration with trying to decipher medical information, partners with her local public library and is grant funded to provide a Wellness Workstation in her salon. Years later, her clients research health information between services using the workstation, evening health literacy classes are regularly conducted for community members and continued funding has …

Food and cooking have been a central theme in several courses developed recently at the University of West Georgia. In this presentation, the nature of the content and learning outcomes of these courses will be presented. A unique multi-tiered approach will be offered to show how this theme can be effectively used to engage audiences of all ages and capabilities to use the scientific method.
