A Pilot Study: The Use Of A Survey To Assess The Food Knowledge Of Nutrition Students At Various Levels Of Nutrition Education, Chante Chambers

College of Education and Human Sciences: Dissertations, Theses, and Student Research

A working definition of a concept known as ‘food literacy’ encompasses using basic food preparation knowledge that has been learned, understood, and practiced to make better food decisions. To advance these skills for client service, a post-secondary nutrition program would need to include objectives that allow application of knowledge. For this reason, the purpose of this study was to determine the difference in knowledge and application among students in 100, 200 and 400 level college nutrition course(s). A survey was developed to measure the food knowledge of these college students as they prepare for careers as health care professionals. The …

Given Credit Management Behavior, What Effect Does Educational Debt Have On Mortgage Approval Timetables?, Andrew Mcleod

Honors Projects in Finance

Educational debt in the United States is a major concern as many young people enroll in undergraduate institutions beyond their financial means and the gap between the cost of an education and family income widens. Research suggests that an individual’s level of educational debt will have an effect on their financial future, but measuring the extent of damage incurred is much more difficult and needs further examination. This paper analyzes the relationship between the level of educational debt at graduation and time between graduation and home mortgage approval. This paper also examines the relationship between credit management behavior and mortgage …

Male Farmers Coping With Loss Of Spouse: Impacts On Farming Operation And Family Life, Daniel O. Wilson Jan 2012

Male Farmers Coping With Loss Of Spouse: Impacts On Farming Operation And Family Life, Daniel O. Wilson

Theses and Dissertations--Community & Leadership Development

Losing a spouse is as devastating an experience anyone will ever deal with in his or her life. Research, however, shows that men have a harder and longer time coping with the loss of a spouse than women. When the widower’s profession is farming, there are no resources to specifically help that individual with their loss. The purpose of this research was to gain insight into the lives of widowed farmers with particular focus on transitions in their farming operation and their family life. Through their stories, we learn what is happening before the loss of the female spouse on …
