Advancing Health And Well-Being In Hospitality: Employers Respond To New Workforce Expectations, Deborah Popely, Leigh Uhlir

Kendall College at National Louis University conducted research between Fall 2022 and Spring 2023 on the status of health and well-being initiatives in hospitality. The research involved in-depth surveys with 27 hotels and 18 restaurants, for a total sample of 45 hospitality businesses located primarily in the Chicago region. In addition, working collaboratively with the national food service research firm, Datassential, a sample of 401 food service providers from across the U.S. was collected. This handbook is the final output of the research project Diversity & Intercultural Inclusion in Hospitality (D&ICIH), a TU Dublin’s EDI-funded project that aimed to understand the challenges, barriers, and cultural differences that migrant workers experiences in cafes, cafeterias, catering services and restaurants on university campuses experiences. The research also focused on exploring the gender dimension of how migrant women perceive hospitality work, combined with an intersectionality approach (with a focus on gender and socio-economic status) looking to identify multiple factors of advantages and disadvantages in work and life with in-depth and thematic interviews. Hotel interns' satisfaction with the internship may play a significant role in determining their intention to develop a career in the hospitality industry. Factors that affect hotel interns' satisfaction and career intention are thus important to be identified in linking hospitality education to industry human resource needs. This study aims to identify the key factors that affect job satisfaction and career intention of hotel interns in China. Data were collected through a survey on hospitality management students in three Chinese universities. Emotional labor is integral to guest-host interactions. Given that this is a competency that is desired by industry in graduates, it is important to understand how the concept presents in the Hospitality and Tourism curriculum. This exploratory qualitative study sets out to investigate how hospitality and tourism educators perceive the development of emotion skills in Hospitality and Tourism education curriculum. Data was collected through in-depth interviews with higher education hospitality and tourism educators in Australia. Findings reveal that the development of emotion skills is a taken for granted concept that is not explicitly addressed within the curriculum. Implications for practice …

Unions have played important roles in Indigenous struggles in Latin America and in campaigns that fueled civil rights movements in the United States, including efforts to organize agricultural, hospitality, and health care workers. But, Native Americans have had less of a connection with organized labor. Indeed, in the current climate, labor and tribes seemed to be locked in an adversarial relationship. Tribal leaders see unions as a threat to their sovereignty. Since its modest beginnings in the early 1980s, tribal gaming rapidly developed into a $25 billion industry that generates over a quarter million jobs. However, the increasing employment of non-Indians in tribal casinos prompts new cultural and political challenges. This paper analyzes tribal and commercial casino trade publications in order to demonstrate how tribal casino employee relations play a significant role in transforming public policy and perceptions of tribal government in the United States.

For the first time in history, estimates of the overweight people in the world rival estimates of those malnourished. The World Health Organization (WHO, 2002) ranked obesity among the top 10 risks to human health worldwide. In the early 1960s, nearly half of the Americans were overweight and 13% were obese. Today some 64% of U.S. adults are overweight and 30.5% are obese. Even more alarming, twice as many U.S. children are overweight than were twenty years ago, a 66% increase.
