Previous studies have found that professionalism is an important success factor for chefs. Yet, research on what professionalism “means” to chefs, and how they “make sense” of it, is currently underexplored. While there is some evidence of the significance of the traditional chef’s uniform in professional identity formation, it also needs further consideration. Culinary arts lecturers and chefs have already contributed to these discussions, but the student voice remains largely unknown. Macau has seen the rapid development of casinos in the past two decades. Long-established regulatory control of the city’s gaming industry ensures compliance with the applicable regulations and standards. Among other regulators and staff, gaming inspectors are responsible for the first-line supervision of gaming operations across Macau casinos. This paper is the first attempt to review the casino regulatory inspection in Macau with a particular focus on the functions and practices of gaming inspectors stationed at casinos. Maine History

During the Great Depression, Maine joined the rest of the nation in economic crisis. While the Depression affected the entire state in some way, the tourism industry took a harsh blow. The deteriorating economy led the Maine State Government to attempt counteracting the ramifications of the Depression. In response to the Depression, the Maine State Government increased advertising and publicity to promote tourism. This response included several publications that today give readers a glimpse into the history of the tourism industry during a difficult time.

To tell the story of Brooklyn’s complex history in hospitality and cuisine is to tell a story about the tensions of high and low culture, of the mobility of capital and residents, and of the tremendous influence yielded by macroeconomic change. A sleepy bedroom community for the eighteenth and much of the early nineteenth centuries, Brooklyn’s waterfront (both historically and today) is deeply tied to its nineteenth and twentieth-century industrial heritage. Dining out during the 1980s in Ireland could be summarised gastronomically by prawn cocktails, Chicken Maryland, Black Forest gateau and bottles of Blue Nun or Mateus Rosé. All this changed with the Celtic Tiger when the Irish public was introduced to Caesar salad, tomato and fennel bread, tapenade and Chardonnay. From 1989 to 1993, Restaurant Patrick Guilbaud was like a lone beacon of consistency in the Irish edition of the Michelin Guide. Unions have played important roles in Indigenous struggles in Latin America and in campaigns that fueled civil rights movements in the United States, including efforts to organize agricultural, hospitality, and health care workers. But, Native Americans have had less of a connection with organized labor. Indeed, in the current climate, labor and tribes seemed to be locked in an adversarial relationship. Tribal leaders see unions as a threat to their sovereignty.
