Can a recipe divide historians, gastronomes, and chefs? The answer is yes if we are dealing with carbonara, an iconic Italian dish, famous throughout the world. However, so much animosity could have deeper roots than the recently renewed controversy over its authorship suggests. This article aims to study the case of carbonara as an example of the race to conquer consumers’ memories. Following a transdisciplinary methodology, the author identifies three main approaches to the making of carbonara: glocal, regional, and creative. The Camera Eats First: What Foodstagramming Reveals About Personal Behavior, Xiaoxiao Fu

Some chefs may try to ban it, but 'foodstagramming'—diners taking photographs of food to post on social media—is a valuable tool that can boost both restaurants' and diners' public image. That's the conclusion of new research led by UCF Rosen College of Hospitality Management's Associate Professor Xiaoxiao Fu. The study takes a psychological perspective and finds that foodstagramming helps both individuals' self-efficacy—the belief that if individuals act in specific ways they can achieve certain goals—and provides opportunities for restaurants to promote their businesses in new and exciting ways.

Proposed regulations for alcohol advertising prevent beverage companies from targeting people under the legal drinking age. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. Alcohol alternatives beverages, including no-alcohol and low-alcohol products, are increasing in popularity and can function as compliments to alcoholic products to decrease the total alcohol volume consumed or as substitutes for alcoholic products. Medical tourism is a multifaceted and multiphase process involving many agents and actors that requires careful planning and execution. The coordinated process involves the biomedical, transportation, tourism, and leisure industries. Baby boomers are a crucial cohort for hospitality marketing as they have more money to spend and more time on their hands than younger cohorts. However, reaching them on social media is harder. There is one social media platform popular with baby boomers: Facebook. Dr. YunYing Zhong and Dr. Valeriya Shapoval at UCF Rosen College of Hospitality Management, together with their collaborator, have combined their different areas of expertise to analyze the effectiveness of social media marketing directed at baby boomers from an unusual angle: the illusionary and imaginary relationships we build with fictional characters.

The restaurant market is becoming more competitive, and businesses are challenged to differentiate themselves in this sector in terms of quality of services. This research aimed to identify the specific indicators for measuring the quality of restaurant service in Brazil. Based on a quantitative paradigm, we adopted a user-generated content analysis with a sample of 1,143,631 customer reviews from 35,611 restaurants in seven Brazilian cities available on the TripAdvisor platform. © 2020 Edith Cowan University With the proliferation of user generated online reviews, uncovering helpful restaurant reviews is increasingly challenging for potential consumers. Heuristics (such as “Likes”) not only facilitate this process but also enhance the social impact of a review on an Online Opinion Platform. Based on Dual Process Theory and Social Impact Theory, this study explores which contextual and descriptive attributes of restaurant reviews influence the reviewee to accept a review as helpful and thus, “Like” the review. This paper will summarize the planning process, methods, and results of a local Ellensburg, Washington event and student project, “Mickey’s Countdown to Christmas.” This event was a fundraiser taking place during the holiday season, where the goal was to raise money for the Ellensburg High School Band (EHS). The EHS Band takes a biannual educational trip to The Disneyland Resort, and as over 100 kids want to go in the year 2020, it has become an expensive endeavor. Since the mid-1990s, numerous Moroccan riads, or traditional homes built around a central courtyard, have been converted into tourist accommodations in Morocco’s old medinas. This paper seeks to analyze the impact of riad-style hostels specifically on the medinas, as hostels are relatively new to Morocco and have various benefits and consequences for the community. Though hostels are often portrayed as a sustainable form of tourist accommodation compared to multinational hotel corporations, they have an acute impact by bringing tourists into previously residential spaces and exacerbating the effects of global gentrification. One aspect of leadership strategy is the need to account for the core values of the organization.The purpose of this case study was to explore the tribal gaming leader strategies used toward sustainability, an action that leads to tribal economic development and stability. The conceptual framework of situational leadership theory was used to guide the scope and analysis of this study. Six tribal gaming leaders from Oklahoma participated in a focus group session; 7 additional tribal gaming leaders from the same gaming organization participated in individual interview sessions. Every year, millions of Muslims converge in the Kingdom of Saudi Arabia (KSA) to perform the Hajj pilgrimage. So how does a government prepare for a potential crisis when hosting an event of this magnitude? A content analysis guided this study on crisis communication strategies taken by the Saudi government before, during, and after Hajj 2018 and how Saudi Arabia utilized the media to deliver proactive messages to ensure a successful Hajj season. The study found that the government created and built a positive image in the media through the use of effective management, preemptive messages, and multiple communication channels.

This qualitative case study examines the intersection of a Native-owned casino, revenue-sharing with its host community, and the impact of tourism marketing efforts vis-à-vis funds provided to the community’s tourism agency. Specifically, this report studies downtown Niagara Falls USA from the time period between 2006 and 2016, and seeks to determine whether and how funds from Seneca Niagara Resort & Casino boosted tourism marketing efforts by Niagara Tourism & Convention Corporation (NTCC). This study uses the Computers Are Social Actors (CASA) and domestication theories as the underlying framework of an acceptance model of retail service robots (RSRs). The model illustrates the relationships among facilitators, attitudes toward Human-Robot Interaction (HRI), anxiety toward robots, anticipated service quality, and the acceptance of RSRs. Specifically, the researcher investigates the extent to which the facilitators of usefulness, social capability, the appearance of RSRs, and the attitudes toward HRI affect acceptance and increase the anticipation of service quality.
