Vermont is home to approximately 61 licensed cheese producers, who create over 150 varieties of cheese using the milk from cows, goats, and sheep (Vermont Agency of Agriculture Food & Markets 2013).1 Vermont cheese production ranges in size from a four cattle “farmstead operation” that creates a traditionally produced “artisan” cheese to a large dairy company that creates industrially produced cheese for a domestic and international market.

From farmers’ market booths to kitchen tables, demand for locally-produced foods has increased significantly over the last decade. Yet, despite increasing popularity of local foods, theoretically-based research of this topic has just begun.

This study fills this gap in literature and broadens the current research base by utilizing Value-Attitude-Behavior Theory to explore local foods purchasing in the farmers’ market channel. My dissertation provides theoretical insights on individual level entrepreneurial identity in three inter-related essays, drawing on multiple theories and disciplines. In the first essay, I advance a dual-process model of identity development, contributing to the debates in the broad identity literature. I articulate that the intrinsic prospection of identity is another fundamental process of identity formation, besides the social construction of identity, the prevalent notion in the literature. I propose a comprehensive conceptual framework of entrepreneurial identity. Advocates of microlending suggest it is a sustainable intervention that reaches the poor directly and offers them the means to invest and improve their incomes (Khavul, 2010; Morduch, 1999; Yunus, 2007); yet, impact studies of these interventions have suggested they often have little or even a detrimental impact on borrowers (Van Rooyen, Stewart & De Wet, 2012). Early entrepreneurial action focuses on opportunities and involves two distinct evaluative phases: (1) recognizing that something is an opportunity for somebody and (2) deciding whether or not one wants to pursue exploitation of a particular opportunity. Scholars primarily explain the first of these phases using individual differences. However, entrepreneurial action involves the nexus of opportunities and individuals. In my dissertation, I examine the independent effects of opportunity differences on opportunity recognition as well as the degree to which they are contingent on individual-level constructs. This research addresses the question of why some people become entrepreneurs whereas others do not. The debate has been going on for decades in entrepreneurship. In this dissertation, I address this question by decomposing it into two related questions. The purpose of this study was to determine the customer preferences between buying produce from local farmers’ markets verses buying produce from supermarkets within San Luis Obispo County and determine if the application of a delivery service of said produce would be successful. Studies abound investigating whether agency or stewardship theory is more applicable within family firms. Both theories predict enhanced firm performance, but starkly contrast in behavioral assumptions and structural prescriptions. Agency theory assumes an economic model of man; agent behavior is based on self-interest and may conflict with the principal’s interest. Governance structures that control and monitor agents are prescribed to thwart opportunistic behavior and better align the goals of the principal and agent. This Dissertation investigates the first strategic response to performance decline (i.e., the retrenchment stage in the turnaround process) in family-owned businesses (FOBs). Specifically, I study how the interplay between financial and non-financial objectives in FOBs affects the strategic preferences of family-owners when circumstances put the wealth (financial and non-financial) of the family at stake. In this three-essay Dissertation, I employ the behavioral agency model (BAM) or the socioemotional wealth (SEW) preservation perspective to explain and predict the effect of SEW on an FOB's retrenchment strategies.
