Food insecurity is a well-documented issue in Virginia and throughout the United States. Food enterprises, especially those in under-resourced communities, often lack access to the credit needed to start or expand their operations due to the narrow profit margins of food enterprises. Community development financial institutions (CDFIs), such as Virginia Community Capital (VCC) address this issue by providing low-interest financing to food businesses that can increase food security and strengthen local economies. The recent climatic events, economic uncertainty and peak oil are leading to greater levels of awareness of our vulnerability for food supply and security. During the summer of 2010/11 much of the east coast of Australia was inundated with record rainfall and proceeding flooding, which impacted on food delivery from regional production areas to urban markets. Consequently many of our major food outlets in suburban neighbourhoods ran critically low in supply and price increases were significant. Food systems development, while historically not the purview of professional planners, would benefit greatly from their interdisciplinary expertise. Small agricultural businesses are important economic and social drivers in the Middle Rio Grande. Increased demand for locally grown foods by Middle Rio Grande residents and food businesses, like restaurants and grocery stores, mean that more than ever, farm businesses have opportunities for success and for making meaningful contributions to their communities. This study assessed land use/land cover changes and its effect on Agricultural land in Anyigba. The objectives were to identify and delineate different land use / land cover categories, assess the rate of change that occurred and examine the impact of land use/land cover change on food security using satellite remote sensing data collected at three different years (1987 Land sat TM, 2001 Land Sat TM and 2011 Land Sat ETM). Food insecurity is defined as “a household‐level economic and social condition of limited or uncertain access to adequate food” (USDA Economic Research Service 2009). Low‐income households tend to be food insecure for many reasons. The first and most obvious would be the access to monetary resources. If a household does not have a sufficient income, it is difficult to keep an adequate amount of food for all household members at all times. Another reason would be that many low‐income households cannot afford a car and/or do not have easy access to public transportation or reliable private transportation.

This mixed-methods study addresses the relationship between the availability of food and realized food access by studying the retail food landscape of Holyoke, Massachusetts – a small, socio-economically diverse city. While a large body of empirical research finds that low-income communities and communities of color are especially likely to lack adequate access to healthy foods and experience increased vulnerability to food insecurity, few studies explore urban food environments through a mixed-methods case study approach.
