Poultry production holds an important place in Arkansas economically and as a food source. The importance of poultry production ultimately hinges on the demands of the consumers and the perceptions that drive their purchases. With this in mind, this study surveyed consumers to assess their perceptions of poultry production in Arkansas. The instrument used to survey consumers was created by the researcher and an expert committee at the University of Arkansas. This thesis deals with cost of production for cellulosic energy crops of switchgrass, miscanthus, and energy sorghum. The first chapter explains the rationale for development of decision support software called Energy Crop Analysis & Planning (ENCAP) and Switchgrass Harvest Date, Yield, Nutrient Removal Estimator (SHYNE). The second chapter examines harvest date implications on yield, nutrient removal, opportunity cost of modified sale dates, and post-harvest storage losses. Despite the interest of consumers in sustainable and environmentally friendly products, only a limited number of studies have focused on sustainability level disclosures for consumer packaged goods. The general overarching purpose of this dissertation is to extend the internal reference point and information processing literatures to better understand how consumers will process sustainability disclosures. The purpose of this study was to determine if there were any significant differences (p < .05) in cognitive achievement between different instructional techniques on students enrolled in high school agricultural science classes in Northwest Arkansas. Lesson content covered the

production, uses, and performance of biodiesel fuels in compression engines. Treatments were different instructional techniques including lecture, demonstration, and a combination of lecture and demonstration. Cognitive achievement was measured on low level cognition and high level cognition. In addition, this study sought to find any correlation between student perceptions of lecture versus demonstration and tinkering self-efficacy on student achievement.

The objective of this research was to quantify and assess the energy use and efficiency of commercial cross-flow dryers when drying rice using a range of drying and ambient conditions. First, equations that predict the theoretical energy required to dry rice from any given initial moisture content to a desired final moisture content were developed for several rice cultivars using a semi-theoretical approach to obtain a basis for comparison to calculate energy efficiency. America's agricultural producers continue to age. According to the U.S. Census of Agriculture, the average age of farm operators increased from 55.3 in 2002 to 57.1 in 2007. During the same period, the Census shows a thirty percent decrease in the number of farmers under age 25. Health-oriented juices are prime candidates for the nutraceutical market due to their inherent healthfulness and convenience. Fruits such as açaí berries, blueberries, blackberries, black cherries, Concord grapes, cranberries, and pomegranates are rich in potentially health-supporting polyphenolics, which makes the juices of these fruits attractive for nutraceutical optimization. The compositional, sensory, and stability properties of blueberry, blackberry, and Concord grape juice blends were explored in an extended shelf-life study. Initially, 100% blueberry juice had the highest total monomeric anthocyanins (67.40 mg/100mL), 100% blackberry juice had the highest total phenolics (249.24 mg/100mL), and 100% Concord juice had the highest polymeric color (23.21%). …

This study sought to assess students' and instructors' perceptions regarding the value of an agricultural communications magazine capstone course at three universities that were identified as exemplary in an effort to describe the characteristics leading to the course's success. Using a qualitative survey methodology, the investigator administered an open-response survey, conducted personal interviews with purposively-selected students in each course and the instructors, and made field observations. An abundant by-product of cheese production, whey, contains all essential amino acids and some distinctive peptides with functional and nutraceutical properties. Typically, proteins from whey are tailored for specific uses by chemical or enzymatic hydrolysis; however, subcritical water hydrolysis is a novel alternative used successfully to hydrolyze various substrates. The purpose of this study was to estimate the effect of utilizing portfolio theory on producers' profitability in the production of soybeans in three test locations - Keiser, Marianna and Rohwer - in Arkansas. The study used empirical yield data, their variances and covariances over a nine year period (2002-2010) in selecting a portfolio of soybean varieties that maintains or increases yield while minimizing the yield risk. Shipping points represent major strawberry production regions and are the closest price point to the farm. The second stage is the terminal market.
