While food security is traditionally defined with four pillars, there are increasing calls for an additional two (agency and sustainability) so that we may more comprehensively conceptualize all dimensions of food security. However, the challenge is that it is difficult to effectively measure agency, a person’s control over their food system. Here we surveyed a cohort of Vermonters at three time points over the first year of the pandemic. The surveys were conducted in March/ April 2020, June 2020, and March/April 2021. The demographics of the 441 Vermonters who responded to all three surveys are comparable to average Vermont demographics on income, but the respondents were more likely to have a college degree and to identify as female. This brief explores how the use of food assistance programs varied within this population and changed over the course of the pandemic. Key findings include: 1. Introduction: Food insecurity means lacking access to adequate, nutritious, and safe food. Collegiate food insecurity rates at ten Appalachian campuses range from 22.4% to 51.8%, and have been associated with unfavorable health and academic outcomes.

Purpose: This study compared cooking, dietary, and food safety characteristics of food secure (FS) and food insecure (FI) sophomores at a university in Appalachia in the context of the USDA definition of food security.

Methods: Data were collected using an online questionnaire. Descriptive and inferential procedures compared FS and FI sophomores (p < 0.05).

Food insecurity has been a direct and almost immediate consequence of the coronavirus disease 2019 (COVID-19) pandemic and its associated ramifications on unemployment, poverty and food supply disruptions. As a social determinant of health, food insecurity is associated with poor health outcomes including diet related chronic diseases, which are associated with worst COVID-19 outcomes (e.g., COVID-19 patients of all ages with obesity face higher risk of complications, death). As a result of urbanization, fresh, healthy food can be expensive and easily contaminated but space for local farming is limited. Roofs can be underutilized in densely populated cities and can offer a space for local fresh farming. The purpose of this study is to find if growing leafy vegetables on the roof can limit heavy metal exposure from air pollutants. By growing Spinach on five roofs and five ground locations around the Portland State University campus, at varying heights, we can extract the heavy metals found in these greens and compare them to each other. We surveyed a cohort of Vermonters three times during the first year of the COVID-19 pandemic to understand the impacts of the pandemic on food security and food access. The surveys were conducted in March/April 2020, June 2020, and March/April 2021. A total of 441 Vermonters responded to all three surveys. This brief shares changes in their experiences between March 2020 and March 2021. Key findings include: 1. The objective of the current study was to determine if patients of a large health care system in Detroit who self-identify as food insecure live further away from healthy grocery stores compared with food secure patients. Second, we explored whether food insecurity and distance to healthy grocery stores are related to ecological measures of vehicle availability in the area of residence.

In the Ghanaian context, climate change and food insecurity are particularly crucial challenges in the northern regions, where most people are engaged in diverse activities in the agricultural sector. The intensification of crop production has been identified as one of the major drivers of environmental degradation. While significant advances could still be made with more widespread adoption of sustainable intensification technologies that address the agronomic efficiency of nitrogen fertilizers, the dynamic use of agricultural land across seasons and associated crop-specific responses to fertilizer applications have so far been largely overlooked. This paper explores the potential for improving the economic-environmental performance of crop production through spatially integrated modeling and optimization, as applied to Bangladesh. This article sheds light on the root causes of terrorism by assessing the effect of food security on domestic terrorism among developing countries. Food security is a fundamental physiological need and captures a core well-being outcome. We argue that food insecurity creates grievances among citizens and increases demand among them for action against the government. Terrorist organisations provide the opportunity for citizens to channel their grievances against the government by resolving collective action problems and mobilising citizens. To safeguard against meat supply shortages during pandemics or other catastrophes, this study analyzed the potential to provide the average household’s entire protein consumption using either soybean production or distributed meat production at the household level in the U.S. with: (1) pasture-fed rabbits, (2) pellet and hay-fed rabbits, or (3) pellet-fed chickens. Only using the average backyard resources, soybean cultivation can provide 80-160% of household protein and 0- 50% of a household’s protein needs can be provided by pasture-fed rabbits using only the yard grass as feed. Accurate phenological information is essential for monitoring crop development, predicting crop yield, and enhancing resilience to cope with climate change. This study employed a curve-change-based dynamic threshold approach on NDVI (Normalized Differential Vegetation Index) time series to detect the planting and harvesting dates for corn and soybean in Kentucky, a typical climatic transition zone, from 2000 to 2018. We compared satellite-based estimates with ground observations and performed trend analyses of crop phenological stages over the study period to analyze their relationships with climate change and crop yields.
