Over the past two decades, the diagnoses of gluten allergies and celiac disease has increased significantly. Although there has been no development of a cure for either ailment, these conditions can be managed by the elimination of glutenous foods from a person’s diet. In previous studies, the financial cost of replacing or excluding glutenous foods was higher than the financial cost of diets that do not exclude gluten. This paper seeks to analyze China’s historical relationship to famine to better understand contemporary Chinese policy on food security. The historical analysis focuses both at the political level and the level of the peasantry, with a particular focus on the Great Chinese Famine. This Chinese specific analysis in conjunction with an understanding of food security history helps to better understand two white papers on food security from the Chinese Government in 1996 and 2019. The neighborhood retail food environment is an indicator of short- and long-term health conditions. Disparities in Covid-19 health outcomes have been identified as specifically impacting minority populations in Ann Arbor and Ypsilanti, MI. This study explores these cities' neighborhood retail food environments alongside neighborhood racial composition with three measures: Modified Retail Food Environment Index (mRFEI), Grocery Store Density, and Fast-Food Density. This study's purpose is to determine whether racial composition predicts the food environment and therefore may contribute to poor health outcomes.
