A Study Into The Relationship Between Nutrition And Income In A College Setting, Alyssa Hicks May 2018

A Study Into The Relationship Between Nutrition And Income In A College Setting, Alyssa Hicks

Economics Undergraduate Honors Theses

Many health related issues in the United States are linked to Americans’ poor diet choices. College students, a subset of that population, establish important trends in their diet habits that they will maintain over their four years in college and beyond. Although previous literature has found income to be a determinant of diet, this paper does not find income to be a significant predictor of student nutrition. One potential explanation is that college provides a unique environment and circumstance. Yet, additional income suggests it could be important for students who suffer from a lack of funds—increasing their income brings about …

Master's Theses and Doctoral Dissertations

This study evaluated characteristics of food blogs and food bloggers that potentially affect food choices. It was hypothesized that most food bloggers would not have a nutrition-related degree and food blog environments wouldn’t be supportive of health-conscious food choices. A cross-sectional study was conducted using a novel evaluation tool on 187 blogs, out of which 100 blogs met inclusion criteria. Because some blogs had multiple bloggers, two samples were investigated: 111 bloggers (n1 = 111) and 100 food blogs (n2 = 100). Data were gathered from a randomized list of blogs taken from americanfoodbloggers.com. Results showed that 6% of bloggers …

The Politics Of U.S. Food Policy, Evan Murphy Jan 2018

The Politics Of U.S. Food Policy, Evan Murphy

CMC Senior Theses

Throughout the 20th century, American farmlands, agricultural policy, and diets have seen dramatic transformations. The number of farms in America has decreased, but the average size of farms has increased. These larger farms are increasingly more industrialized and produce a short list of profitable, subsidized commodity crops. Similarly, changes in the American diet throughout the 20th and 21st centuries have reflected these shifts in the landscape of American farmland. Simultaneous to the evolution of American farms was an increase in federal involvement in American agriculture through policy that seems to encourage these trends. Although separating out the causes from the …
