Using diet, exercise, consumer behavior, and demographic data from the National Health and Nutrition Examination Survey (NHANES), I examine the factors that contribute to body mass index (BMI) for the adult working age population. In Chapters 2 and 3, I examine how female BMI varies by race and ethnicity. In Chapter 4, I study the effect of food deserts on BMI and obesity for both males and females.

Notoriously disenfranchised since the bloody conquest of the Americas, peoples of various Indigenous nationalities that reside within Ecuador fought for the constitutional recognition of the nation as both plurinational and multicultural, in order to secure intercultural public policies that would affect patterns of agrarian distribution, indigenous education, health, and overall representation. The food an infant is fed can reflect many things: a source of nutrition, the social and cultural circumstances into which an infant is born, or even a family’s beliefs about the body and breast milk as a source of nutrition. Exclusive breastfeeding, currently the gold standard for infant feeding in the United States (US), is often identified as an expectation in discourses on being a “good mother.” African American mothers in particular are the least likely group in the US to breastfeed in any capacity and many efforts are underway to increase the breastfeeding rates of this population.

According to the Council on Social Work Education (2016), only 37.4% of the 19,596 BSW degrees awarded during the 2014-2015 academic year, were awarded to students from historically underrepresented groups (CSWE, 2016). Since gaining independence in 1961, Tanzania has enjoyed high levels of national identification, far higher than other states in east Africa. Yet, between 2005 and 2015, the Afrobarometer survey recorded a decline in the national identity and an increase in ethnic identities in Tanzania. These changes are striking because of the successful nation-building policies implemented by former president Julius Nyerere. In addition, during the same period of 2005-2015, states bordering Tanzania have increased their level of national identification. Immigrant replenishment may affect assimilation patterns of US-born descendants by maintaining the use and relevance of the language of origin. This study asks, how does Mexican immigrant replenishment affect Spanish language use among adult US-born Mexican descendants? Descendants include members of the second or later generations. I propose that greater exposure to Mexican immigrants will encourage adult US-born Mexican descendants to maintain their ethnic origins, especially language of origin. Therefore, the higher the rate of immigrant replenishment, the more likely respondents will speak Spanish at home. The purpose of this study was to explore how higher education and ethnicity may individually impact perceptions of people with mental illness, as well as to explore the intersection of higher education and ethnicity on such perceptions. Descriptive phenomenological in design, this study explores the experiences of ten students at a university in Portland, Oregon. In semi-structured, open-ended interviews participants recalled experiences in which higher education, ethnicity, and the intersection of both impacted how they thought about mental illness. Interview transcripts were coded and analyzed using Colaizzi’s (1978) seven-step process. The analysis resulted in several themes supporting the current literature …

According to the Centers for Disease Control and Prevention, approximately 1 in 6 children are diagnosed with a developmental disability or with developmental delays, which are associated with impairments in physical, language, cognitive, and/or adaptive behaviors. To fill a gap in the literature, the adaptive profile of young children initially served as developmentally delayed (DD) were analyzed to explore adaptive differences between different ethnicities and placement settings of children at the time of the initial referral prior to DD assessment. The purpose of this study was to examine various aspects of Millennials' attitudes related to their beliefs about the United States and in the context of their personal, career, and family goals and ethnic identity. Another purpose of this study was to determine if selected personality variables would predict attitudes toward the United States. It was found that Millennials who held positive attitudes toward the United States in terms of being a viable country for them also had relatively clear and developed personal, career, and family goals. The dissertation analyzes multilevel models to predict mortgage origination and the allocation of subprime credit pre-and-post Great Recession. With representative samples from two full years of mortgage applications filed in the top 100 U.S. metropolitan areas, the dissertation uncovers evidence of persistent disparities by race and neighborhood minority concentration despite controls for socioeconomic, demographic, assimilation and housing variables. Mortgage outcomes varied by applicant race, neighborhood racial composition and neighborhood racial change. Findings suggest evidence of Fair Housing Act violations and disparate impacts towards minority homebuyers and minority neighborhoods. Results lend support for spatial assimilation theories in explaining much of the …

Ethnic identity is a major component of the psychological development and well-being of adolescents and adults. In the United States, immigrants are often tasked with balancing their minority culture and a dominant White American culture. This study used the two-dimensional Racial/Cultural Identity Development (R/CID) Model to illustrate progression toward an integrated ethnic identity, in which individuals identify with and integrate their minority ethnic group and the dominant group. An integrated identity is achieved at the Integrative Awareness status of the R/CID Model. This dissertation examines topics related to racial and ethnic diversity through three essays. Each essay takes a new perspective on a current issue in the literature and utilizes a unique statistical methodology to address that issue. The first essay uses the Monte Carlo Simulation Method to develop a measure of segregation for the ACS and uses it to assess whether the ACS is useful for measuring segregation in places with different sizes. The second essay considers whether a relatively unexplored factor, genetics, is correlated with migration. This study examines the role of ethnic inclusion as a factor of regime stability in Afghanistan through an historical case analysis from 1880 until 2009. By utilizing case study research methods, the goal of the study is to examine all the past regimes in order to show whether there is a relationship between the dependent variable regime stability and the independent variable ethnic inclusion.
