Food insecurity is a prevalent problem in the United States (Feeding America, 2021). The COVID-19 pandemic has exasperated existing health disparities including access to the food resources necessary for a healthy lifestyle (Feeding America, 2021). The impact of food insecurity on health, well-being, and quality of life is well-documented Schmelzer & Leto, 2018; Seligman et al., 2010 Emerging adults and college students may experience food insecurity due to limited access to nutrition assistance programming and low food literacy (El Zein, et al., 2019; Owens, et al, 2020). Amidst the COVID-19 pandemic, older adults are advised to remain in their homes and personal spaces since they are at greater risk for COVID-19 related illnesses, hospitalizations, and deaths. Health professionals and caregivers are concerned that preventative measures, especially social isolation, may have long-term psychological and age-related effects among older adults. A survey prepared by the Center for Global Health at Old Dominion University, in collaboration with Healthy Chesapeake Inc., assessed social isolation, associated emotions, and daily coping activities of older adults in Chesapeake, Virginia. Research Methods (PBH 360-1002) offered by the School of Public Health was taught remotely by Manoj Sharma to undergraduate students (primarily from public health) in Fall 2020. The specific teaching techniques that were used in teaching this course were delivery as remote learning, organizing the entire course in Canvas and making it available from day 1, recording all lectures beforehand in Panopto, utilizing cases studies, employing WebEx and its breakout sessions, and having skill-building activities in each module that were sequential.
