Food insecurity is a national issue that disproportionately impacts Louisiana citizens, contributing to the state’s poor health outcomes. We know that the Supplemental Nutrition Assistance Program (SNAP) and food pantries improve access to food, but we have limited data on what interventions improve food insecurity. The Geaux Get Healthy Clinical Program at Our Lady of the Lake (GGHOLOL) is a clinic-based community program that leverages community partnerships and a clinical setting to provide education and access to resources for individuals with food insecurity. Programming which promotes healthy aging may be lacking in states where nutrition and health interventions are directed earlier in life. Due to Maryland’s increasing aging population, a team of 10 University of Maryland Extension Family and Consumer Sciences educators received permission to adapt and implement the Iowa Department of Public Health’s, in partnership with the Iowa Department of Human Services and Department on Aging, Fresh Conversations program to fit the needs of Maryland’s older adults. Fruit And Vegetable Shopping Behavior And Intake Among Low-Income Minority Households With Elementary-Aged Children, Brittni N Metoyer, Ru-Jye Chuang, Minjae Lee, Christine Markham, Eric Brown, Maha Almohamad, Jayna M Dave, Shreela V Sharma

Low-income children and families do not meet the recommendations for fruit and vegetable (FV) intake. This study aimed to assess the association between FV shopping behavior and child FV intake through a cross-sectional study design analyzing self-reported surveys (n = 6074) from adult-child dyads of Hispanic/Latino and African American participants enrolled in the Brighter Bites co-op program. Through quantitative mixed effects linear regression models, accounting for school-level clustering and adjusting for covariates, child FV intake was positively associated with shopping for FV at large chain grocery stores (p < 0.001), natural/organic supermarkets (p < 0.001), warehouse club stores (p = 0.002), discount superstores (p < 0.001), small local stores/corner stores (p = 0.038), convenience stores (p = 0.022), ethnic markets (p = 0.002), farmers’ markets/co-op/school farm stands (p < 0.001), and gardens (p = 0.009) among Hispanic/Latinos participants. Among African American participants, there was significant positive association between child FV intake and shopping for FV at natural/organic supermarkets (p < 0.001), discount superstores (p = 0.005), and convenience stores (p = 0.031). The relationship between location and frequency of shopping for FV and child FV intake varied between races. Further research is needed to better understand the influence of cultural and physical environmental factors. Nutrition education programs are vital to encouraging families to make healthier food choices and purchases to improve child FV consumption.

Structural racism has contributed to increased poverty, food insecurity, and obesity rates among African Americans relative to Whites. Nutrition education programs should therefore consider how well they serve this population. The objective of this investigation was to assess whether African American and White Supplemental Nutrition Assistance Program Education (SNAP-Ed) participants in Louisiana had comparable dietary behavior outcomes by conducting secondary data analysis of previous program evaluations from 2017-2018 and 2018-2019 among African American and White SNAP-Ed participants (n = 434). Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Substance use disorder (SUD) is one of the most detrimental health, social, and economic problems in the United States. Limited studies suggest providing tailored nutrition education during SUD treatment correlates with positive recovery outcomes. The University of Kentucky Nutrition Education Program conducted two focus group sessions to explore and determine educators’ instructional and programmatic needs who deliver nutrition education to clients in substance use recovery throughout Kentucky. The study team identified four emerging themes and several subthemes related to Nutrition Education Program educators working with clientele in recovery. 4-H SNAC Clubs engage youth in low-income schools with majority Latinx enrollment in leadership activities to increase schoolwide health and wellness. 4-H SNAC Clubs aim to develop youth health leaders, establish youth-adult partnerships, and increase access to 4-H in Latinx communities. Outcomes related to healthful living and positive youth development were assessed using the Teen Teacher Retrospective Survey (n=59) across five 4-H SNAC Clubs. Results show positive outcomes related to self-reported health behaviors for students and their families and leadership development. 4-H SNAC Clubs can increase access to 4-H among Latinx youth and support healthier communities through the Supplemental Nutrition …

North Carolina Extension specialists conducted a needs assessment of Family and Consumer Sciences (FCS) agents to determine their foods and nutrition programming needs. Researchers examined agent and community needs, agent-offered programming, and barriers and facilitators to program implementation. Results will help inform the development of targeted agent trainings, materials, programs, and technical assistance related to foods and nutrition. The study is intended to help maximize the success of FCS foods and nutrition programming by supporting agents in delivering high-quality, evidence-based programs. This paper reviews study implementation, results, and relevant implications for other Extension professionals interested in performing a similar analysis.

Good nutrition is an important part of maintaining a healthy lifestyle. A balanced diet can promote positive health outcomes, protecting against health problems caused by nutritional deficiencies. Canada has reported poor diet quality and high rates of overweight and obesity among children. Obesity has been linked to several non-communicable diseases including type 2 diabetes, heart disease, and some forms of cancer. Efforts to improve lifelong, healthy eating behaviours must be implemented.

Purpose: This project aimed to measure the acceptability and feasibility of plant-based diets among low-income individuals with type II diabetes at the Samaritan House Food Pharmacy and to create a user-centered pilot program to encourage the adoption of a plant-based diet.

Background: Plant-based diets are effective for preventing, treating, and reversing type II diabetes, but there is not much evidence about the acceptability and feasibility of these diets.

The Pick it! Try it! Like it! (PTL) educational resource set, developed to display in grocery stores and farmers markets, teaches individuals how to shop for and prepare healthy fruit and vegetable dishes. Because program buy-in must be obtained from location managers before implementation occurs, the purpose of this study was to qualitatively examine the perceptions that grocery store and farmers market managers have regarding PTL implementation. Locations that requested PTL materials during 2013-14 were contacted and asked to answer 13 questions. This research identified themes when exploring the Dietary Guidelines for Americans’ (DGA) attributes of relative advantage, compatibility, complexity, trialability, and observability to provide information for the design and structure of a nutrition education program for the Mississippi Communities of Healthy Living Nutrition Intervention. Diffusion of Innovations theory was used to develop education sessions to promote the adoption and consumption of a DGAbased healthy diet innovation in the Lower Mississippi Delta. Food insecurity occurs when an individual does not have consistent access to fresh, nutritious food in safe, socially acceptable, and affordable ways. This is a significant challenge facing Kentuckians, with one in six adults and one in four children experiencing some degree of food insecurity. Background — National childhood obesity prevention policies recommend that childcare providers educate young children about nutrition to improve their nutrition knowledge and eating habits. Yet, the provision of nutrition education (NE) to children in child-care settings is limited.

Interest in the role that parenting assumes in child obesity has increased the need for valid and reliable screening tools that are specific for populations targeted by programming efforts. While low-income families comprise a large audience for Cooperative Extension obesity prevention programs, valid and reliable selfadministered parenting assessments for this population are lacking. Development of such tools requires understanding low-income parents’ interpretations of questions related to their parenting. To support nutrition-related behavioural change, a dietitian can offer tailored educational programmes based on patients’ specific dietary behaviours. A model has been developed to integrate learning technologies into this process. This tool allows patients to self-report their dietary intake, creating awareness, and to receive individually tailored dietary advice from their General Practitioner (GP) via a dietitian, to assist with change. As morbid obesity increasingly affects Hispanic-Americans, the incidence of Roux-en-Y gastric bypass procedures (RYGB) among this population rises. Prospective research on the impact of postoperative educational interventions focused on Hispanic-Americans is needed to prevent premature weight loss plateau, weight regain, nutritional deficiencies, and relapse of obesity-related comorbidities. This randomized-controlled study evaluated the impact of a comprehensive nutrition and lifestyle education intervention (6 biweekly postoperative sessions that incorporated motivational strategies for behavioral change) as compared to a non-comprehensive approach (printed guidelines for healthy lifestyle).
