Objective: Knowledge and competence in sustainable food systems is a priority in dietetic programs and outlined in program accreditation standards and standards of practice for Registered Dietitian Nutritionists (RDNs). However, limited literature exists on how students are learning about sustainable food systems. The purpose of this study was to explore dietetic student experiences and perceptions after the inclusion of a farm-based experiential-learning activity. Methods: A qualitative approach was utilized to explore student reflections following their experiential-learning with sustainable food systems via university-based farms. Family and Consumer Sciences (FCS) and Extension professionals need to understand the lived experience of poverty because it affects every aspect of an individual’s life. Poverty is related to inadequate nutrition and food insecurity, lack of access to health care, insufficient child care, unsafe neighborhoods, lack of affordable housing, under-resourced schools, and a lower quality of life. Attitudes toward poverty vary widely among Americans and can be categorized as either internal/individual attributions (e.g., laziness, welfare dependency, etc.) or systemic/structural attributions (e.g., unemployment, inflation, etc.). Individuals holding internal attributions toward poverty are more likely to have negative feelings toward impoverished individuals. …

Dietetic Student Involvement In A Sports Nutrition Education Program For University Athletes, Taylor Paeth, Diana Cuy Castellanos, Rebecca Gonter-Dray, Karyn Catrine

Objectives: The purpose of this study is to examine the impact of a sports nutrition counseling experiential learning opportunity on self-efficacy and nutrition counseling skills in the undergraduate dietetic students and dietary goal adherence in collegiate athlete clients after receiving the student-led nutrition counseling intervention. Methods: This mixed methods design, using a thematic analysis and pre- and post-testing, was implemented at a mid-sized university in the Midwestern United States. There were fifteen undergraduate dietetic students and nine collegiate athletes. Results: Counseling confidence in the dietetic students improved significantly from session one to session three (p < 0.001). Conclusions and Implications: Similar …

This narrative inquiry explored how youth are processing their Peace Bus program experiences two and a half years after program completion. The purpose was to gain an understanding of (1) what program components the participants reflect on, (2) how they conceptualize their program experiences, and (3) what factors contribute to their reflection processes. This research sought to address the gap in literature where little is understood about the ongoing experiences of program participants of adventure wellness programs and the processes that lead to positive changes. The purpose of this investigation was to determine whether an experiential learning opportunity, specifically a study tour experience, would improve the cultural intelligence of prospective educational leaders and would challenge them to expand their own cultural understanding and behavior. Several prospective leaders who enrolled in a graduate program in Educational Leadership volunteered to attend a study abroad program that was intended, in part, to enhance their cultural competence. The Denison Pequotsepos Nature Center (DPNC) is a community organization that, through its various programming, works to perpetuate a vision of humans as part and parcel of the world. In 2013, when the Nature Center acquired the Coogan Farm property, the organization built a community garden called the Giving Garden to serve surrounding communities, expanding services to the foodservice sector educational programming around sustainable agriculture. This mixed methods study explored emergency preparedness and disaster response in the concept-based learning curriculum adopted by the Alabama Community College System (ACCS) in 2016. The concept-based curriculum employs active learning in lieu of the traditional lecture-style teaching methods.

This study addressed the problem that educators may be unfamiliar with this content and are unsure how to present this material to students. The purpose of this study was to gain insight on teaching methodologies, to better prepare nursing students on this content.

An Ecological Approach To Experiential Learning In An Inner-City Context, Pauline Garcia-Reid, Robert Reid, Bradley Forenza

In‐depth, qualitative interviewing was employed to describe processes and competencies experienced by family science interns, who practiced in a high‐risk ecological context. Twenty interns from a 3‐year period were recruited. All had interned on the same federally funded, HIV/substance abuse prevention grant in the same focal city. Within this sample, it was determined that experiential learning—vis‐à‐vis the internship—facilitated both intrapersonal processes and ecological competencies for family science interns, who may otherwise have lacked this knowledge when assuming professional roles. Implications for policy and practice are discussed.
