The United States is facing a crisis of widespread food insecurity and exceedingly high rates of diet-related diseases like diabetes, obesity, and hypertension. To address this challenge and set a course for improved nutrition and food access nationwide, the Biden-Harris Administration hosted the first White House Conference on Hunger, Nutrition, and Health in over 50 years on September 28, 2022. In the National Strategy, released in conjunction with the Conference, the Administration identified a set of actions that the federal government will take to help achieve its goal of ending hunger and increasing healthy eating and physical activity by 2030, …

The first Conference held more than 50 years ago by President Nixon in 1969 had significant impacts on our Department and the prevalence of food insecurity in our country. Nost notably, the Conference sparked significant expansions to Food Stamps, now known as the Supplemental Nutrition Assistance Program (SNAP), from 2 million in 1968 to 11 million by 1971. The Conference also increased the reach of the National School Lunch Program (NSLP), which served 2.9 million low-income children at the time of the Conference and expanded to serving nearly 8 million low-income children by 1971. Everyday millions of Americans face barriers to accessing food, housing, and other supports–––making the impossible decision of whether to put food on the table or cover other essential needs. Food insecurity and diet-related diseases, such as heart disease and diabetes, affect people of all ages and in all communities. It was for this reason that the Biden-Harris Administration hosted the White House Conference on Hunger, Nutrition, and Health in September 2022. Seasonal Testicular Histology And Acystic Lobular Spermatogenesis In The Western Lesser Siren, Siren Intermedia Nettingi (Caudata: Sirenidae), Stanley E. Trauth

I investigated the seasonal testicular histology and acystic lobular spermatogenesis in the Western Lesser Siren, Siren intermedia nettingi, from periodic sampling of this salamander over a span of 21 yr (1994-2015) in northeastern Arkansas. My results include the following general findings: 1) the largest testicular lobules occurred primarily in January-February during spermiogenesis and spermatozoa maturation; 2) lobular regression and spermatogenic cell recrudescence were underway by late March; 3) proliferation of secondary spermatogonia in lobules was prominent in May; 4) transformation of secondary spermatogonia into primary spermatocytes occurred by mid-July, and these cells became larger in diameter through increased nuclear …

Distal Urogenital Anatomy In The Male Wood Frog, Lithobates Sylvaticus (Anura: Ranidae), Stanley E. Trauth

I investigated the microanatomy of the distal urogenital system of the male Wood Frog (Lithobates sylvaticus) from a small sample (n = 6) collected in northern Arkansas in February 2020. Specifically, my primary objectives were as follows: 1) to focus on the histology of the paired Wolffian (urogenital) ducts caudally from the kidneys to their merging with the urodeum of the cloaca, 2) to reveal the structure of the paired seminal vesicles (sperm storage structures), and 3) to compare epithelial morphologies between the distal urogenital tract and its neighboring distal alimentary tract. This article advocates the need for a history of the development of modern international food law and suggests an analytical approach to complement the chronicling of events. Comprehension of this history will help elucidate the evolution of a complicated modern global food system, including its resiliency and vulnerability as demonstrated by Covid-19, thereby providing valuable context for change in the system where needed. This essay makes the case for such a history in three parts. Obstacles To Dieting Behavior, Shahram Heshmat

Despite documented short term success, dieting has a very low success rates, most dieters regain their weight back within 3-5 years. The question is why do people fail to stick to their goal for eating a healthy diet in order to lose weight? One possible answer is that people have self-control problems in the form of a present-biased preference. From a prior perspective, they want to behave relatively patiently, but as the moment of action approaches, they want to behave relatively impatiently. The essay presents some insights from behavioral economics to explain why people fail to maintain healthy behavior.

In early 2019, the Canadian Government released the much-anticipated new Canada Food Guide. It is a food guide that de-emphasizes dairy products and promotes plant-based eating. Notably, in the new version, milk and milk products are de-listed as one of the previously four essential food groups. On the surface, it seems that the federal government is promoting veganism and helping to bring about a friendlier future for animals and humans harmed by being producers and consumers of dairy, as the new Guide may seriously contract the currently robust Canadian dairy industry and its powerful lobby. In 2017, Mozambique ranked as one of the least developed countries in the world by measures of health, education, and income. With a minimal annual income, purchasing adequate food to meet recommended levels of nutrients for a healthy diet is difficult, leaving 40% of the country undernourished. This study analyzed what foods are available during the dry months (hungry season) of May through October in the Nampula province of Mozambique to determine if it is possible to meet recommended levels of nutrients from purchasing and growing food. Polyunsaturated fatty acids (PUFAs), especially eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), are major maternal dietary supplements due to their positive benefits on neurological tissue growth during the first 12 weeks of gestation. Previous studies show that EPA and DHA inhibit muscle formation but promote adipogenesis. However, no research has addressed the question whether high intake of EPA and DHA affects brown fat development during gestation. The objective of this study was to measure the effect of EPA and DHA supplement on brown adipogenesis and potential pathways related to mitochondrial biosynthesis using fibroblasts as in vitro model. Seeds that Feed (STF) is a mobile food pantry located in Fayetteville, Arkansas. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. The purpose of this study was to determine if STF’s model is an effective way to increase individuals’ access to fresh fruits and vegetables and increase their potential to meet the United States Department of Agriculture’s Food Patterns (USDA-FP) for to fruit and vegetable consumption.
