Food-coping strategies (FCS) are often measured as direct indicators of food insecurity, as they allow for an assessment of the vulnerability and sustainability of attempts to maintain a sufficient food supply by limited-resource individuals. They are often easier to assess than other household indicators of sufficiency, including income and food consumption. Because vulnerability is considered, food-security policies and programs that account for FCS can broaden their efforts from addressing current constraints to food consumption, to include actions that also address future threats to food security. Through a survey conducted in 2020, we investigated changes in eating, shopping, and dietary behaviors of Maine adults by age group before COVID-19 (prior to March 2020) and during COVID-19 (August/September 2020). This investigation was part of a larger investigation to assess food security, access, and food systems during COVID-19.6 The survey was conducted in Maine between August and September 2020 and illustrates responses from a sample of 618 Maine adults aged 18 years and older. Findings include:
- Respondents who were 55 years and older were less likely to reduce fruit, vegetable and seafood consumption during COVID-19.

Rice is an important staple for more than half of the world’s population and is the main staple in Bangladesh, accounting for 65 percent to 70 percent of the daily calorie intake. The importance of rice consumption and the high level of food insecurity in Bangladesh highlights the importance of having markets that efficiently price rice according to consumer preferences. Weaknesses in the grades and standards system in low-income countries across Sub-Saharan Africa undermine the transparency of agricultural markets. In the Democratic Republic of the Congo (DRC), Ghana and Mozambique rice is predominately sold in open bags and if rice price does not reflect its quality, then inefficiencies may lead to consumer welfare losses. The phenomenon that warm non-stress temperatures promote stem and petiole elongation, as well as leaf hyponastic growth, is collectively known as thermomorphogenesis. While it is known that the basic helix-loop-helix (bHLH) transcription factor PIF4 is highly inducible by temperature elevations and controls thermomorphogenesis in dicots (e.g., Arabidopsis thaliana), the molecular mechanism underlying thermomorphogenetic growth in monocots is not clear. The 2020 pandemic and economic crisis showcased the fragility of the American food system. In the months of quarantine and lockdowns, a growing number of Americans searched for ways to feed themselves and their families. Community-based and volunteer-supported feeding programs worked to bridge the divide between the hungry and their next meal. In many cases, these programs rely on an unpaid workforce and donations – of time, food, and facilities. With limited resources, volunteer-led programs often lack centralized training options; this guidebook seeks to fill that void. Food insecurity (FI) is a socioeconomic condition characterized by inadequate access to enough food and nutrition to sustain health and wellbeing. Food insecurity is a risk factor for chronic and age-related conditions, raising concerns for the aging population of people living with HIV (PLWH), in whom food insecurity is disproportionately prevalent. PLWH are at increased risk of nutrition-related complications and chronic co-morbidities, thus food insecurity may exacerbate adverse health outcomes in this population. Objectives: To assess the relationship between chronic disease risk behaviors: tobacco usage, alcohol consumption, sedentary lifestyle, and food insecurity (FI) among Vermonters. Methods: This cross-sectional study uses a sample (n= 1,378) from Vermont’s 2018 Behavioral Risk Factor Surveillance System (BRFSS). The examined outcome is FI. The predictor measures were defined as at-risk tobacco use, alcohol consumption, and sedentary lifestyles.The following were established as covariates on the association between the dependent and independent variables: income, sex, age, race/ethnicity, and activity limitations. Results: In the unadjusted binomial logistic regression (Table 2), tobacco users were 3.32 times more likely to be food …
