In recent years, there has been an intensifying campaign by some stakeholders regarding concern over genetically modified (GM) foods in the U.S. As a result, the issue of labeling has entered into the federal agenda. This research uses Query Theory to provide a deeper understanding of the demand for GM foods and the preferences for GM policy. Query theory is first applied to the formation of hypothetical bias in the estimation of consumers’ willingness-to-pay. The purpose of this study was to examine the influence of strength-training exercises on the functional fitness in older adults. The original convenience sample consisted of 658 participants who attended group strength-training classes offered through the Cooperative Extension Service. The Senior Fitness Test was used to assess baseline fitness levels at the beginning and end of the 12-week strength-training program. Data was collected from 2008 to 2015. Of the 658 participants, 110 were aged 60 to 94 and presented posttest scores occurring approximately 12 weeks after pretest dates. Of the 110 subjects, 99 were female and 11 were male. The …

It is underdeveloped in food security, agricultural production, and nutritional status, and research shows its residents are not foreign to poverty and malnutrition. The non-linear relationship between old crop – new crop year spreads in corn futures market and stock-to-use (S-U) ratios published by the United States Department of Agriculture is analyzed. Using a non-linear logarithmic smooth transition regression (LSTR) model, we capture asymmetric market behaviors in high and low S-U regimes. Capturing this relationship and understanding the non-linear aspects of the relationship is of interest of grain merchandizers and speculators in the market. A spread trading strategy is simulated for the sample period, January 1985 through April 2015, to determine if the non-linear relationship is a profitable arbitrage opportunity in the market.

This project assesses the effectiveness of the Expanded Food and Nutrition Education Program (EFNEP) within the context of supermarket access. EFNEP is a national community nutrition education program that strives to give participants the tools to live healthier lives. Analysis was performed on participants from 16 Arkansas counties that completed EFNEP during 2013 or 2014. The program outcome is measured in terms of the change in Healthy Eating Index (HEI) as calculated from 24-hour diet recalls at program entry and exit. This thesis consists of two studies analyzing the first phase of the Cocoa Livelihood Program (CLP-I), a current World Cocoa Foundation (WCF) development project, sponsored by the Bill and Melinda Gates Foundation and aimed at improving the livelihood of small scale cocoa producers in Sub-Saharan Africa. The first study uses a difference-in-differences econometric model to estimate yield enhancements attributable to farmer field schools which CLP implements. The results show a 32%, 34%, 50% and 62% increase in cocoa yield for Ghana, Côte d’Ivoire, Nigeria and Cameroon, respectively. The University of Arkansas Division Of Agriculture’s Public Policy Center has educated Arkansas voters about statewide ballot issues for 10 years. The ballot issue education program, was evaluated during the 2014 election cycle to determine the program’s impact on voters. This descriptive study sought to describe program participants, to determine knowledge transfer of county agents, to describe knowledge acquisition of program participants, and to measure whether people who attended Cooperative Extension Service presentations made informed choices on Election Day. A few ancient baldcypress-bottomland hardwood forests survive across the southeastern United States in a mosaic of remnant old-growth stands left untouched by extensive logging during the early 20th century. Uncut stands in the Southeast that survived centuries of disturbance following European settlement tended to be too senescent and non-commercial to justify logging. Remnant ancient baldcypress forests at Black River, North Carolina, appear to contain the oldest living trees in eastern North America and The Nature Conservancy has protected several of these stands. College students were randomly divided into three groups and listened to one randomly assigned sound treatment in sensory booths. The Shake Weight® (SW®) is designed to improve muscular fitness in a quick and inexpensive way. This study aimed to determine if the SW® was an effective tool at improving muscular fitness, body composition, and bone mineral density (BMD) in post-menopausal women. Participants were 17 healthy, post-menopausal women from aMidwestern University and divided into two training (SW® and HIT) interventions that lasted 10 weeks. HIT participants performed three sets of 8 repetitions at 80% of their estimated 1RM for the chest press, leg press, lat pulldown, and seated row. The purpose of this study was to observe how the presence of peripheral arterial disease affects the level of post-exercise blood lactate and post-recovery blood lactate during and following the six-minute walk test (6MWT). The 6MWT was administered to 49 participants (33 classified as Non-PAD and 16 classified as PAD) over the age of 50 with no uncontrolled cardiovascular or metabolic diseases or a cardiovascular event in the previous 6 months. A 2012 Across-Breed EPD table, adjusted to the Angus breed, was used to estimate breed sire effects on birth weight and weaning weight of the herd's offspring (Kuehn and Thallman 2012a). This thesis examines whether children's food environment, especially food stores that have fresh produce, affects obesity prevalence among elementary school children in the state of Arkansas. Misclassified food outlet types in the Dun and Bradstreet commercial data set were first corrected and then food environment measures were computed and aggregated to geographic regions corresponding to school attendance areas. After applying classical panel estimation, it was found that the fixed effects model fit the data best.
