Stress Management in the Kitchen was implemented to address the knowledge gap between nutrition and healthy living.The purpose of the workshop series was to give clients a fun and digestible way to increase their knowledge on how their health and nutritional habits can or should be applied to how they deal with stress. Background: Thirteen percent of the United States (U.S.) population is over 65 years of age and up to 50% are malnourished; therefore, seniors were chosen as the subjects for this research study.

Objective: To identify malnutrition in older adults using the Nutrition Focused Physical Examination (NFPE), and to compare the results to the Academy of Nutrition and Dietetics parameters for assessment of nutritional status.

Design: Each senior voluntarily completed a head-to-toe NFPE, 24-hour diet recall, and anthropomorphic measures were also taken. Information was later analyzed and results were given to each participant.

The purpose of this descriptive study was to determine the reasons why 38% of the students at the University of Arkansas experience food insecurity, yet only 1% of students have used the Jane B. Gearhart Full Circle Campus Food Pantry, in hopes to provide a guide to the Center for Community Engagement in their endeavors to reduce food insecurity on campus (Lisnic, 2016). Malnutrition is an important public health issue in Burkina Faso where 30 % of children are underweight for their age and 92% suffer from iron deficiency. Such statistics indicate that there is a significant lack of adequate nutrition in the country. With approximately 80% of the population employed in the agricultural sector, development projects have focused on increasing agricultural production and commercializing output to ameliorate poor nutrition. This study examines the introduction of the Official Food Rules in 1942 and the formation of subsequent dietary self-analysis practices in Ontario curriculum and textbooks. Examination of the influences of nutrition science, Ontario education policy and politics, and Canadian health policies are combined with Foucauldian critical discourse analysis of selected classroom materials. The Grade 4 dietary self-analysis, based on the various forms of the food guide, from 1946, 1974 and 2011 are analysed and compared. Themes of truth, power and identity within this regime of truth are examined. The ordering of food in the Food Rules was a discursive event. …

This paper, through an adaption of the United States Department of Agriculture Adult Food Security survey tool, aims to identify food insecurity rates at the University of Massachusetts Amherst, the demographic characteristics associated with food insecurity, potential financial factors that contribute and predict food insecurity rates, and the relationship between food insecurity and academic performance. Lastly, this paper examines on and off campus resources available to students and students perception of food insecurity before college as compared to actual food security status in college.

In recent years, food banks have grown increasingly aware of the role diet plays in wide-spread public health issues such as cardiovascular disease, diabetes, and obesity. Food banks already purchase healthy foods directly and select nutritious items distributed by government programs such as The Emergency Food Assistance Program (TEFAP). Recently, some banks have implemented nutrition policies to regulate donations made by businesses and individuals to further decrease the volume of less healthy options in their warehouses.

The number of farms in America has decreased, but the average size of farms has increased. These larger farms are increasingly more industrialized and produce a short list of profitable, subsidized commodity crops. Similarly, changes in the American diet throughout the 20th and 21st centuries have reflected these shifts in the landscape of American farmland.
