The Use Of And Interest In Ancient Grains In Northeastern Institutional Kitchens, Jg Malacarne, Cheryl Bilinski, Bruce Wyatt, Kevin Leavitt

We report on a survey of institutional kitchens in the Northeast, seeking to better understand the extent to which institutions currently use locally produced grain products and what barriers they face in increasing their use of local grain products. We focus additional attention on local, organic grains, and ask specifically about a set of “ancient” grains: barley, einkorn, farro, rye, and spelt. Results indicate that current use of these products is extremely low. Familiarity with the grains in question, both by kitchen staff and their customers, emerges as a first-order barrier to expanding use of ancient grains in institutional kitchens. …

Despite the many challenges, the entirety of Maine’s seafood economy—from harvesting, transportation and logistics, marketing, and food service—still offers valuable employment and career opportunities. Understanding training needs and career aspirations, as well as how they align to available training and career opportunities is key to addressing the challenges of recruiting, training and retaining a skilled and ready workforce. Findings from recent projects assessing workforce training needs, preferred training formats, existing workforce barriers, and incentives will be shared as well as input from educators and others who support the industry. AquEOUS Fellowship. The inaugural summer of this new USDA fellowship program welcomed six undergraduate students to Orono from UMaine and four other U.S. colleges and universities. Over the course of 10 weeks, they approached aquaculture projects with "two-eyed seeing," incorporating local indigenous perspectives. The program took them to some of Maine’s most beautiful field settings, including the Center for Cooperative Aquaculture Research, the Darling Marine Center, and the Hurricane Island Center for Science and planning the program for next summer’s larger cohort! Climate change is a major threat to food security, particularly in low and middle-income countries that are highly dependent on staple crops for subsistence. The vulnerability of staple crops, like maize, in the face of climate change, is increasing due to the increasing frequency of droughts. This thesis aims to evaluate two mechanisms through which farmers may be more willing to adopt new technologies that increase their resilience to climate change: First, I evaluate the effectiveness of a new virtual maize farming game as a learning tool to teach farmers about the outcomes they could obtain under different weather events …

The Role Food Security, Financial Literacy, And Nutrition Literacy Play On The Diet Quality Of College Students, Amelia Sullivan

This research aimed to explore the roles of food security status (FSS), financial literacy (FL), and nutrition literacy (NL) on the diet quality (DQ) of college students at the University of Maine. This research additionally sought to understand mediational relationships among these factors that could impact DQ.

A cross-sectional convenience sample of college students completed an online questionnaire assessing sociodemographic factors, short healthy eating index (sHEI)-score, FSS, FL, and NL. Participants' continuous data were analyzed using a Pearson correlation. Differences between interactive NL and sHEI-score while controlling for gender and meal plan differences were analyzed using a MANCOVA. Additionally, differences …

Lewiston/Auburn Community Market’s business model is to provide a no-to-low- cost grocery store, shared commercial kitchen space, and rentable cold storage for residents of Lewiston/Auburn. After reviewing their business plan and speaking with a representative, I identified two challenges that the LACM may face—building community infrastructure around their program and effective communication. Expanding and expediting access to climate change information can improve collective action outcomes. Accordingly, the Maine Climate Action Plan called for the creation of an information-coordinating hub, to enable effective and efficient use of climate information in Maine’s climate change response. To aid that need, the University of Maine created the Maine Climate Science Information Exchange (MCSIE) office as a gateway to information about climate-relevant research, the scientists conducting that research, and the most recent data and applied science efforts relating to Maine’s climate change strategies. Eight Projects through The University of Maine and partners receive federal funding from NOAA Grant Awards. NOAA has allocated over 2.9 million dollars to UMaine and other partners for the Fiscal Year 2022 from three different NOAA grant programs: Sea Grant, Saltonstall-Kennedy, and the Atlantic States Marine Fisheries Commission. Recipients include the University of Maine’s Aquaculture Research Institute (ARI), University of Maine Center for Cooperative Aquaculture Research (CCAR), Maine Sea Grant, and Maine Aquaculture Innovation Center (MAIC) based at UMaine’s Darling Marine Center.
