San Bernardino County is faced with a significant issue of food insecurity with its residents relying on food pantries to meet their food and nutritional needs. This project consists of two main key components: a bilingual, culturally relevant budget-friendly Hispanic cookbook and a comprehensive resource guide about ways and ingredient substitutions adaptable to the recipe based on what is available.
The cookbook included …

Improving Food Security To Decrease Hypertension At An Urban Community Clinic, Christine S. Villalta
Master's Projects and Capstones
Diet and lifestyle changes have been proven to reduce blood pressure in patients with hypertension, and a key dietary approach aligned with this recommendation is the DASH diet, which includes consuming fruits and vegetables. Food insecurity, defined as lacking enough safe, nutritious food to maintain an active and healthy life, is a growing crisis in the United States, affecting 13.5% of U.S. households in 2023. This is especially significant for those whose chronic disease management depends on the accessibility of healthy food. An urban community clinic implemented a Food Security Program to decrease food insecurity and reduce hypertension among their …

Assessing Social Determinants Of Health In Primary Care, Vicki Carpenter
Doctoral Projects
The social determinants of health encompass the various circumstances and environments in which individuals reside, develop, labor, and experience aging (Social Determinants of Health, 2022). Income Predicts Fpg, But Food Security Is The Mediator, Amy Blansit
Income Predicts Fpg, But Food Security Is The Mediator, Amy Blansit
eJournal of Public Affairs
This research was aimed at studying the RISE pilot program and stability factors of low socioeconomic groups. Self-sufficiency programs focus on households moving from crisis to empowerment; no longer relying on subsidies. Gaining employment and housing alone do not create socioeconomic stability. It was therefore determined that the RISE Program should be evaluated to determine the effectiveness at ending dependency. Methods: Thirty-four (30.6%) participants were included in this evaluation. Using logistic regression techniques, sixteen items on the RISE Self-sufficiency Assessment were explored. Results: RISE participants derived significant economic benefits, and that food security seemed to be the greatest mediator of …

Neighborhood-Level Predictors Of Obesity Among African American Children In California, Uche Onyeka
Journal of Social, Behavioral, and Health Sciences
The increased prevalence of childhood obesity is a major public health concern nationally and globally. Childhood obesity is primarily caused by the imbalance between caloric intake and caloric expenditure; however, its increase over the past decades may be due to environmental and behavioral factors. The purpose of the current study was to examine if any relationships existed between childhood obesity, level of physical activity, and neighborhood-level risk factors. This study used the California Health Interview Survey 2009–2014 data sets for African American children aged 5–11 years (n = 1,049). The dependent variable was body mass index (BMI) while the …

Research outputs 2014 to 2021
Food insecurity is considered a “wicked” problem due to the highly complex and at times undefined casual factors. Although many stakeholders are working to address the problem, a possible divergence exists between their views on food insecurity and those of the people who are actually experiencing the problem. The purpose of this study was to investigate whether there was a difference between the opinions of those “at risk” and stakeholders. A total of seven focus groups (two stakeholder groups n = 10, five “at-risk” groups n = 34) and three interviews (stakeholders n = 3) were conducted to ascertain perceptions. …

Individualized Healthcare And Health Disparities: An Examination Of Health Disparities Related To Short-Term Response To Food Insecurity In Low-Income, Urban Communities, Valen R. Diaz
Honors Scholar Theses
The U.S. has seen a spike in chronic diseases along with worsening health outcomes. There are many factors at play to create these circumstances, especially regarding the social determinants of health, like socioeconomic status, access to food, and geographic location. Another concern is health disparities, particularly regarding obesity, and the fact that food access and neighborhood food environments contribute to these disparities. This paper gives a broad overview of American food culture and then focuses on the local food environment in urban, low-income communities, regarding both food deserts and food swamps. There is also a discussion about the response of …
