The seed and pulp contain fats and protein. The fats consist of palmitic acid, oleic acid, linoleic acid, and linolenic acid, despite palmitoleic and stearic acid traces. β-sitosterol, β-Amirin, lupeol, and stigmasterol are from the unsaponifiable matter of seed oil. The color of edible bird’s nest is associated with its nitrite concentration, but this relationship remains inconclusive. This investigation aimed to evaluate the nitrite content in edible bird’s nest of four different colors: white, yellow, orange, and red blood. Fifty-eight edible bird’s nest samples were obtained from five swiftlet farmhouses in Borneo Island, Indonesia and analyzed for nitrite content using Genesys 30 visible spectrophotometer. Results showed that the dark-colored edible bird’s nests (yellow, orange, and red blood) had higher nitrite concentrations of 304, 317, and 309 ppm, respectively, compared with the white-colored one (15 ppm). Extension materials that are sensitive to changing demographics and culture increase relevance and compliance with food safety practices. Produce safety extension materials were developed for U.S. Virgin Islands (USVI) produce growers to help with compliance with a new food safety rule. We developed employee training materials based on a needs assessment and behavioral change was evaluated six months after dissemination. The original materials were not seen as culturally appropriate but after modifications, improvements in food safety practices and behavior changes were observed. These results suggest that extension educators should seek feedback from target populations about potential interventions before implementation.

We conducted a Needs Assessment to evaluate recent programmatic partnerships with community-based fitness organizations. Understanding relationships between demographic and economic factors and equestrian participation could improve horse program design. We implemented an online survey that characterized associations of participation in equine activities, socioeconomic factors, and economic factors with age. Seventy-five percent of respondents ride, and 34% are recreational, non-competitive participants. Respondents were mostly female, and many participate in the sport throughout life. Many respondents indicated they overspent on equestrian activities. Horse programs should incorporate information and activities that address issues unique to females, should develop skills required by amateur or recreational riders, and should incorporate information on financial wellness.

Anaphylaxis is considered a severe, potentially fatal, systemic allergic reaction that occurs suddenly after contact with an allergy causing substance. It is estimated that up to 5% of the population has experienced anaphylaxis, with 1% of hospitalizations and 0.1% of emergency department patients having fatal outcomes. We characterized the population of patients encountered by the EMS agency (786 patients) that had a provider impression of “allergic reaction” and then utilized logistic regression models to estimate associations with the administration of epinephrine in the prehospital setting. Objectives. COVID-19 outbreak brings a challenge to healthcare systems. The sex, age, and cardiometabolic comorbidities have been considered risk factors for disease severity. To evaluate the association between risk factors with death as well the risk of death in hospitalized COVID-19 patients.

However, no known studies have simultaneously examined social and biological factors that contribute to these concerning health disparities.
